Delicious Low-fat Whole Wheat Pancakes

What you need: 

1 cup + 2 tablespoons whole wheat flour
1 tablespoon brown sugar
1 1/2 teaspoons baking powder
pinch salt
2 tablespoons apple sauce
1 cup minus 2 tablespoons water or fat free nondairy milk (I use soy)
1/2 cup walnuts or blueberries, optional

What you do: 

1. Combine all dry ingredients, and mix together. Add apple sauce, water/nondairy milk, and mix until batter drips from spoon, but is not runny. If desired, mix in nuts or berries.
2. Heat griddle/frying pan and spray with cooking spray. Dip your finger in some water and flick it onto the surface of the pan. If it sizzles, it's time to fry up some yummy pancakes.
3. Ladle about 1/4 cup batter into the pan and let it cook until small bubbles form in the center and/or edges are cooked. Flip those babies over. Keep them warm in a preheated oven covered with a paper towel to keep the moisture in.

I didn't have applesauce so I substituted pumpkin butter, and they were great!

Btw if you stick to the recipe they'll be fine.. lol ^^
Just the huge amount of molasses I used which made them different.

Really good. The texture, the way they cook and everything is perfect. the only thing I was slightly unhappy with is the flavour.. which may well be my fault (I changed things a bit: spelt flour, tbs molasses, 1/3'd the recipe, homemade - with skin - applesauce, cinnamon and vanilla) I was amazed that they turned out so well, however, even with those changes. Their appearance and texture are unbeatable.. Just gotta do something about the flavour. I had trouble turning them over purely because I didn't use non-stick spray, and even so they looked better than many other recipes I've tried.
Served them with date-carob syrup (5 small soaked dates, whizzed up in blender with water and 1 1/2 /2 tsp carob powder), strawberries and soy milk.

Good and healthy! Might be good with orange zest or cinnamon.

Made some minor changes:
used spelt flour
didn't use any brown sugar
used 1 Tbsp baking powder
used flaxseed meal instead of applesauce
mixed 1/4 cup apricot jam into the batter, and then cut down the soy milk to 3/4 cup plus 2 Tbsp
Topped it with a cooked prune maple syrup mixture.

Made four big, thick pancakes.

I absolutely love these pancakes!  I've been using this recipe for about two years now, maybe three, and everyone (vegan, vegetarian, and meat-eaters) loves them.

I've made these twice now, and I love them. The first time I made them, I actually forgot to add in the brown sugar (but compensated with a cinnamon sugar topping). The second time I made them, I used cinnamon applesauce, and added about 3/4 tbsp of cinnamon to the batter, and they were fantastic. Definitely a new favorite of mine.

I added some 2/3 cup of mashed pumpkin, and added 1/4 cup of walnuts, and made Pumpkin Walnut Pumpkin Pancakes.

Yummy.

I made these this morning! They were great! I pretty much killed the "low fat" part by adding a handful of chocolate chips but they still tasted awesome! once again...GREAT RECIPE!! :)

We made these this morning, and they were delicious!  Just like the ones my mom made me when I was younger.  My partner still isn't too keen on whole wheat items, so I'll probably try them with whole grain spelt next time.  Thanks for the tasty and quick recipe!
