Deviled Tofu
What you need:
1 (12 ounce) package firm or extra firm silken tofu
4 tablespoons vegan mayonnaise
2 tablespoons mustard
2 teaspoons vinegar
salt and pepper, to taste
sprinkle paprika, to garnish
What you do:
1. Cube tofu into 8 cubes. Carefully scrape out a hole in the middle of the cube, but don't go all the way down, and don't go all the way out to the sides.
2. Put the remains from the holes in a bowl. Chop off the 4 corners of each cube. Put that in the bowl. Now you've got your "hard boiled egg whites."
3. Into tofu bowl, mix mayonnaise and mustard. Pour in vinegar, salt, and pepper. Stir it really well, making sure to mash up all the tofu.
4. Spoon the mixture back into those tofu holes you made, and sprinkle some paprika on top.

SO HOW'D IT GO?
I thought deviled eggs were one of those recipes that just wouldn't work with vegan ingredients, but these were so good! I used mashed avocado instead of veganaise so my filling was green, but it still tasted great. I also put relish in the filling and I took one of the other suggestions and soaked the tofu egg white parts in vinegar.
Has anyone tried apple cider vinegar in this recipe?
I've made these a few times, and I usually soak the "whites" in a water/apple cider vinegar mix for a bit... I never thought of baking them before filling... I'll have to try that next time. The apple cider vinegar gives the "whites" a bit more of an eggy flavor. =)
I finally made these last night after having them in my recipe box forever. Following some of the suggestions here - I used turmeric & I brushed the whites with white vinegar & baked for about 10 minutes. I didn't like the vinegar taste on the whites, so I don't think I'll do that again. Has anyone tried apple cider vinegar in this recipe? Also, I think I might try to get 16 out of the recipe by slicing the silken tofu in half lengthwise.

These were surprisingly good. I was doubtful that anything could come close to the real thing, but these were really good. My little sister could eat a whole batch of these on her own, if I let her. I like to make the filling and let it sit in the fridge for a while and soak up the flavors while the "whites" marinate... I hadn't thought of baking them for a bit, but that's a great idea! I'll try it next time, for sure.

Actually, I always invisioned that avocado flavor had that hard boiled egg yolk thing going on - I might try smashing a little in to the mix :-)
I've always thought avocado had that egg aftertaste too. I even made up an "egg" salad sandwich recipe using avocado but vegweb never put it up. oh well, I'm going to make it for my youtube video then. BTW, this recipe looks awesome, can't wait to try it!
Adding 1/2 tsp or so of tumeric to the "yolks" will give you the perfect coloring for these.
Get some black salt, I forget the exact name. It is used for Indian cooking.
It tastes and smells like sulphur, or hard boiled eggs. Brialliant.
