Dijon Vinegarette

What you need: 

1 part Dijon mustard
2 parts apple cider vinegar
minced garlic to taste (I get the kind already minced in a jar)
sea salt and fresh ground pepper black pepper to taste
optional: something sweet like syrup or sugar to taste
optional: raw flax seeds (or any other seeds you may like)
optional: a few grates of fresh ginger to taste

What you do: 

I just made this up the other day. I NEVER eat salad dressings (because I love the flavors of veggies) but this was actually really good.
I didn't give specific measurements because it's really all to taste and it can all be altered. Since I was just making it for myself, I only made a half cup of it and that lasted a few days (since I didn't use much on my salads).
More can be made for more people.
Enough rambling, onto the recipe (with probably a little more rambling).
In a bowl blend together the Dijon mustard and apple cider vinegar. Once it's blended add some garlic. Use as much as you think you'll like, but remember that since it isn't cooked you'll need less of it than usual.
Add some sea salt and a few grinds of fresh pepper.
At this point you can add the optional stuff if you want. I added a LITTLE sugar to compliment the vinegar.
I also added about a tablespoon of flax seeds and a few grates of fresh ginger.
Really, add any seasonings, herbs, seeds, etc. that you think you'll like.
Mix everything together and toss it onto your salad!
I stored mine in a recycled plastic tub with a lid. Just shake it up when you want to use it.
It was delicious on my spinach, pumpkin seed, sugar snap, dried currant salad!
mmmmmmmmm!

SO HOW'D IT GO?

Ooh, I'll have to make this to keep at school. They serve a Dijon vinegarette at California Pizza Kitchen that's delish. How long would you say this keeps?

i don't know.  but it's full of ingredients that seem to last forever, so i imagine it could last a while.

it's reallllllllly yummy!
