Easy Red Pepper and Sprouts Sandwich

What you need: 

1 red, yellow, or orange pepper
Small handful raw spinach
2 tablespoons garlic or southwest flavor hummus
2 slices vegan German dark whole grain bread
Handful of bean sprouts
Handful of spicy sprouts or broc sprouts
1 tablespoon vegan mayonnaise

What you do: 

1) Chop up or slice your red pepper while the bread is toasting. Toasting that dark, rich German bread is, in my opinion, the key to this sandwich.
2) When you've got your toast, spread some vegan mayonnaise on one slice and the hummus on the other. Next, throw on your bean sprouts and your spicy sprouts. I sometimes splash a small amount of balsamic vinegar on the spinach leaves before adding them, but whether you choose to go that route or not, pile them on now as well. Now slap both sides together and get busy eating that sandwich!
A sliced up pear and some olives are my favorite side items for this sandwich.
Source of recipe: I was hungry. I wanted a sandwich - I thought, "how 'bout this? Wow, that IS yummy!!!"

SO HOW'D IT GO?

This sandwich is perfect!  Simple and easy to make and SO delicious!  Thanks for sharing your recipe.  I used the fluffy southwestern hummus recipe (heavy on the chipotle) and added some shredded carrots.  I didn't have spinach so I used butter lettuce instead.  It's so good on a hot summer day!!  Yum!
