Egg McVegans

What you need: 

1 pound extra firm tofu, pressed
1/4 cup apple cider vinegar
1/4 cup olive oil
1/2 teaspoon salt
1 package (8 ounces) veggie Canadian bacon
vegan cheese (one that melts well, like Follow Your Heart Vegan Gourmet, or Tofutti singles)
vegan English muffins, toasted
vegan margarine
vegan mayonnaise (I use Vegenaise), optional
salt and pepper, to taste

What you do: 

1. Preheat oven to 450 degrees F. Take a drinking glass which is about the same size around at the top as the English muffins, cut around the cup (or if you want, press the glass into the tofu) so that the tofu comes out round in shape. Take the round piece of tofu and cut it in half horizontally, so you end up with two circular pieces. Take the two halves and cut those into thirds, so that you end up with six round pieces of tofu that are about 1/2 inch thick. If you don't want to make 6 English muffins you can cut the tofu into four pieces if you like, which will yield a thicker egg.
2. On a rimmed baking sheet, pour the apple cider vinegar, olive oil, and salt and mix together. Put the tofu on this mixture and coat both sides. Bake for 10 minutes on one side, then flip and bake for another 10 minutes. (I usually cut up the extra little pieces of tofu and include them in the cooking, they are good to snack on).
3. Place the veggie Canadian bacon on a large frying pan on a medium low to low heat, flip it often and don't allow it to dry up, as it will turn up on the edges. After the tofu pieces are baked, turn off the heat and place a slice of the vegan cheese on top of each of the tofu rounds. I usually make the vegan cheese circular as well, but its your call. Place back in the oven to allow the vegan cheese to melt.
4. Butter English muffins on both sides with the vegan margarine of your choice. If you are using vegan mayonnaise, put it on one side and margarine on the other. Place one of the tofu rounds and Canadian bacon slices between the English muffin halves, salt and pepper to taste, and they are ready to eat.
It sounds like there's not much to them in the way of ingredients, but they come out really well and taste awesome.

SO HOW'D IT GO?

So Im not sure if its because I KNOW what egg mc muffins taste like or what but I just wasnt thrilled with this one. the only thing I mainly tasted was the sausage I used instead of fake canadian bacon, because I think that stuff tastes like dog treats. I really didnt think the tofu had much of an egg flavor and I still havent found a good vegan cheese. So I dont think ill be making this one again. :(

Wow - I made these yesterday for brunch and served them with sliced tomatoes drizzled w/ olive oil and they were outstanding. I totally felt like I was eating eggs, which I haven't been able to eat in years, and now that I'm vegan, I wouldn't be eating them anyway.

I made these with my boyfriend yesterday WOW! SOOOOOOO good! The only thing we changed was we added 1/4 teaspoon of turmeric to the "egg" mixture and instead of Canadian bacon used the smart soy sausage. Then we added yummy seasoned waffle fries. I felt like I was eating McD's again but without the grossness! Thank you for this recipe it made my week!

Oh I did not expect this to be so good. I am very happy how this recipe turned out! I love veganizing recipes and I had all the ingredients on hand so I decided to try this and it turned out amazing. Like a few others said, I put the tofu in a seperate pan and baked as directed. It came out great ...  like seriously great! Thank you for posting this recipe, I'd absolutley make it again and again.

I made this lasst weekend and was so excited because of all the fabulous reviews.  I followed the recipe exactly but I was really really disappointed.
I thought that maybe it was just me so made it again the next day with the addition of black salt (on the recommendation of elize), but still I was disappointed.

Sorry to be the only negative here, but I found that this was really bland and TBH a waste of good tofu.

Mmmm... :DThese are really good! I made one for breakfast this morning & will def be making it again. After reading other comments I added a bit of garlic & onion powders to the oil & vinegar mixture. I went ahead & marinated a whole block of tofu, then put the left over slices in the fridge, so whenever I want one I just have to pop it in the oven! Easy! Thanks for this recipe!

hey, WhosJittery-- the last few times I've made this I skipped the vinegar completely, and  it tastes good to me... so maybe you could try reducing it a lot or just leaving it out?

I've made this a few times and each time it turns out kinda different.  It's pretty good but can anybody help me make it not taste so vinegary.  Sometimes when i make the tofu part it taste really sour or bitter, I can't describe it. But I know its the vinegar and I followed the recipe to a T :)  With the exception ofcourse of always trying to add a few more spices like black salt and a few kicks of different herbs.  all in all I do like this recipe but I want to LOVE IT.

This turned out preeeetty good. the thing is I would cook the tofu longer. I made my own cheese sauce nd it was perfect!
