Feel-better No-chicken Soup
1 to 2 tablespoons olive or vegetable oil
1 small onion, chopped
5 cups water
1 vegetable or vegan chicken-flavored bouillon cube (or 4 tablespoons of powdered broth)
3 to 5 tablespoons nutritional yeast flakes
1/2 tablespoon garlic powder
pinch or 2 celery salt
1 bay leaf
1/2 teaspoon turmeric
salt and pepper, to taste
all-purpose seasoning, to taste
1 small carrot, grated or sliced thinly
1 stalk celery, sliced thinly against the grain
leaves from the stalk of celery, chopped finely (optional)
1/4 cup filini noodles ( or alphabet pasta)
1. Fry onion with oil in small frying pan until beginning to brown. In medium size pot, add bouillon cube to 5 cups water and stir.
2. Add nutritional yeast, garlic powder, celery salt, bay leaf, turmeric, salt and pepper and all-purpose seasoning. Stir until dissolved. Add the fried onions, carrot, celery, and celery leaves. Bring water to boil.
3. Add filini noodles once water starts to boil, and time according to directions on package, usually 6 to 8 minutes. If noodles or carrots are not tender, let pot stand with lid on for 10 minutes. Serve but do not eat bay leaf. Feel better!
You can add chopped faux chicken to this recipe, if desired. The appearance of the soup is very similar to "Lipton's" and is perfect for those days when you are feeling under the weather or just plain cold.

It's amazing how delicious this is and how simple it is to make! I LOVE it! I used angel hair pasta broken up into tiny bits and an additional 1/2C water to thin it out some. I also shredded some vegan chicken strips and tossed them in. This is absolutely going in my favorites. Thank you for the recipe!
This was great! Thank you!! I made a few tweeks, I cooked the onion in the same pot, then added the water and followed the recipe. I also used Braggs, and did not have all the spices, so worked with what I did have. For the noodles, I used whole wheat spaghetti that I broke into smaller pieces.
Worked pretty well for me. I added an additional bouillon cube for more flavor. I also cut my carrots into larger pieces. I will add some tofu as well when I re-heat it. Thanks!
Absolutely fantastic recipe! My changes were pretty minor - softened onions with water, added larger carrot and celery pieces, no salt or pepper, a bit of Bragg's, added tofu cubes, no bay leaf and used corn pasta elbows (GF). Also for the all-purpose seasoning, I used the Bragg's all purpose one, which turned out nicely. It warmed me up and makes great leftovers. Thank you for the recipe.
My 2 year old is recovering from a stomach bug and I was looking for a soup to make her feel better. I think this will do the trick. Sounds yummy. I have a little leftover firm tofu that I will be adding as well for some "meat"
Man this was really good. I made a few alterations, but at the base of it was still this great recipe. All I did differently was used thicker carrot slices which means a little extra cooking time and I added rice instead of noodles. Really great. Might make a double batch to freeze tonight.
