Fried Pineapple in Rum Sauce

What you need: 

canola oil, as needed
1/2 fresh pineapple, cored and cut into rings or 1 (20 ounce) can pineapple rings
1/4 cup agave nectar
2 teaspoons rum extract
maraschino cherries, to garnish
1/2 cup shredded coconut
1/4 cup macadamia nut pieces
sprinkle raw sugar, optional

What you do: 

1. Heat oil in frying pan. Lay pineapple rings in pan and coat with agave nectar add rum extract.
2. Fry until tender on both sides, turning each ring several times until agave nectar turns into a thick syrupy coating on all the pineapple rings.
3. Place on a platter and garnish with maraschino cherries, sprinkles of shredded coconut, and macadamia nut pieces. You can also add a sprinkle of raw sugar if you like it extra sweet. Serve warm.
