Garlic and Rosemary Tofu Bites

What you need: 

1 (14 ounce) package extra firm tofu, drained and pressed
2 medium cloves garlic, minced
1 tablespoon olive oil
1 tablespoon minced fresh rosemary
3/4-1 teaspoon salt
pinch pepper

What you do: 

1. Slice tofu into 3/4" cubes and place in a bowl along with remainder of ingredients. Stir to combine. Cover, place in refrigerator, and allow to marinate for 1 hour.
2. Preheat oven to 400º F. Lightly grease a small, rimmed baking sheet. Spread tofu mixture in a single layer on baking sheet.
3. Bake for 25-30 minutes, or until tofu turns golden brown, stirring halfway through. Add pepper, to taste.

SO HOW'D IT GO?

Pretty good, but the rosemary kind of overpowers it to a ridiculous degree. Perhaps less rosemary, more garlic powder, and throw in some ginger. Just a thought. Still pretty good though!
