Garlic Broccoli Penne

What you need: 

1 1/2 cups multigrain penne pasta
2 cups broccoli florets
8 cloves garlic, crushed
3 tablespoons olive oil
1 teaspoon red pepper flakes
1/2 teaspoon sea salt
1/4 cup fresh parsley, finely chopped

What you do: 

1. Prepare penne according to package directions and drain. Meanwhile, steam broccoli until just tender.
2. In a large frying pan, saute garlic in olive oil until fragrant, remove from heat. Stir in pepper flakes and salt.
3. Add penne and broccoli, stirring to coat with garlic mixture. Transfer to serving dishes and sprinkle with parsley. Serve immediately.
I sometimes substitute asparagus, cut in thirds for the broccoli.

SO HOW'D IT GO?

Very yummy. I made the left overs into a cold pasta salad by adding a little vegenaise and a touch of mustard.

Tonight I was trying to decide what to make for dinner. And since the cupboards are pretty bare, I decided that we are going to have to have pasta -- again! But I didn't want another night of boring ol' noodles with boring ol' "red" sauce. So instead I came on VegWeb and searched for a few pasta recipes. This one saved the day! It was absolutely fantastic! I didn't have parsley on hand, and I didn't have fresh broccoli, but I did have frozen so I used that. It was really good! Seriously. I liked the heat from the red pepper flakes, but my husband didn't, so next time I will likely cut that amount in half. Other than that, excellent!

This was SO yummy! It's the first vegan recipe I've made that came out right!

I also didn't have any parsley on hand (do I ever?), and I added some soy milk and nutritional yeast to make it have a creamier consistency. It turned out wonderfully - thanks so much for the recipe! I will be making this again.  ;)b

Totally delicious.  The first time I made this recipe, I made it without parsley, and it was amazing.  I had to use plain black table pepper the second time because my roommate had unfortunately misplaced our red pepper flakes.  Not as good.  Definitely use the red pepper--sublime.

I made this tonight... but didn't have any parsley, and I didn't use the red pepper, but it was so tasty!!
