Gluten-Free Favorite Waffles

What you need: 

1/3 cup rice flour
1/3 cup oat flour
1/3 cup rye, spelt, or buckwheat flour
1/2 to 1 tablespoon sugar
1/2 tablespoon baking powder
1/2 to 1 ripe banana, mashed
1/4 cup Earth Balance, softened
1 cup soymilk
splash vanilla extract
tiny splash almond extract

What you do: 

1. Combine flours, sugar, and baking powder. In a separate bowl, add banana, margarine, soymilk, and extracts. Using a masher or two forks, mash it all up into a goopy wet mixture. If you like things sweeter, add some agave.
2. Add wet ingredients to the dry. The batter should be thick and clumpy, and not runny. Cook in a waffle iron.
Source of recipe: I modified my original waffle recipe to make it gluten-free. My roommate is vegan and gluten-free, and we make these all the time. They are WAY better with straight spelt, but spelt has some wheat.

SO HOW'D IT GO?

Rye and spelt are unfortunately glutinous. Their glutens have a different name than wheat gluten, I can't remember what it is right now,but they react the same as wheat gluten in the body. Just thought I'd let you know.
