Green Beans with Leeks and Smoked Almonds
1 pound fresh green beans, trimmed
1/2 teaspoon salt, divided
2 leeks, thinly sliced and cleaned
2 tablespoons olive oil
1/2 cup smoked almonds, roughly chopped
black pepper, to taste
1. Steam green beans in a small amount of water with 1/4 teaspoon salt, until beans tender; drain.
2. Heat the olive oil in a large skillet and saute the leeks until they're lightly browned. Season with the remaining 1/4 teaspoon salt.
3. Add almonds to the fully cooked leeks. Toss the mixture with the steamed green beans and season with black pepper.
I love this easy side dish because it reminds me of the smoky and fattening taste of green beans I grew up eating, which were prepared with bacon fat and onions, except this is not gross. My omni parents and extended family request I make these constantly.

yum!!! i had to use coconut oil and subbed the smoke almonds with almond slivers, a little more salt and some liquid smoke. holy crap they're good. thank you very much madam. i am going to continue eating the giant bowl now..
