Grilled Avocado and Tomato Sandwich
What you need:
1/3 avocado, mashed
vegan butter (I use Earth Balance)
1 roma tomato, sliced 1/4" thick
2 pieces whole grain vegan bread
fresh basil leaves, optional
sprinkle red pepper, optional
What you do:
1. Preheat pan on stove over medium heat while preparing the sandwich.
2. Slather each bread piece with vegan butter. Spread mashed avocado on the inside of each bread piece. Arrange tomato to cover bread.
3. Add optional ingredients if desired and put together. Place in frying pan and grill until desired brownness on each side.

I had a Veggie Patty in the fridge that was comming up on expiration so I blopped that in the middle!!!
Oh-MY!
Instead of spreading the butter I put it in the frying pan.

This was an awesome sandwich! I grilled the tomatoes for a few minutesl so they wouldnt make the bread soggy and it came out great. ;)b
This is my most favorite sandwich! I use 1 avocado and 2 slices tomato per sandwich (I like the extra filling!). I mash up the avocado and add salt and pepper before spreading on each slice of bread. I add 2 slices of tomato to the sandwich and sprinkle garlic salt on that before putting in the pan. Gives it great flavor and it is super easy!
I love this sandwich! I used spelt bread, smeared the insides of the bread slices with veganaise before adding the mashed avocado. I pressed the tomato slices on a paper towel to remove the extra juice, then added them to the sandwich. I salted it and sprinkled it with a small amount of red pepper. It cooked well and tasted GREAT!

I omitted the basil leaves (I didn't have any). This was good; I liked how the tomato got nice and warm, but it did make the sandwich kind of soggy.
