Happy Vegan Chocolate Chip Cookies
2 cups unbleached flour
2 teaspoons baking powder
1/2 teaspoon salt
cinnamon, to taste, optional
handful vegan chocolate or carob chips
1 cup raw sugar (turbinado; sucanat works too, but sucks up a lot of the moisture)
1/2 cup canola or vegetable oil
1 teaspoon vanilla
1/4 cup water
1. Very important-make sure all ingredients are at room temperature. It will work if they're not at room temp but it works much better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350 degrees F.
2. In a large bowl, mix together flour, baking powder, salt, and cinnamon. Stir in chips. Make a well in the center and set aside. In a medium size bowl, add together sugar and oil; mix well.
3. Add the vanilla and then add the water; mix well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to.
4. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets (top to bottom and 180 degree rotation). Bake another 4 minutes and check them. The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in 2 minute increments from here until they get to where I like them.
5. Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks.
These cookies have come a long way, lots of time and tasting spent on getting them to where they are now. Vegans and non vegans love them. SO HOW'D IT GO?
Hmmmm.. when I make these cookies they come out dry and powdery. But when my husbands makes them, altering the recipe, they come out wonderful! Oh, I can't stand when cinnamon is added. *yuck!*
I've made these SEVERAL times now & each time they are PERFECT. Which makes me not understand why they wouldn't come out perfect for others who have followed the recipe exactly? Maybe it's the brands you are using?
Anyway, was wondering if anyone has tried subbing Almond milk instead of water?
I'm a huge fan of Almond Milk but haven't experimented a lot with using it to bake/cook. Can it be used interchangeably instead of Soy?

Just made these, and they turned out pretty good. The definitely don't taste like any non-vegan cookies I've ever had, but that's not so bad. I subbed the oil for applesauce, used agave nectar in place of the raw sugar, and went half white/half wheat on the flour. They turned out very, very chewy, to say the least. I had to add lots more flour, so I probably didn't need to add the water in the first place...
Regardless, my boyfriend seems to like them quite a bit, so this recipe earns my overall approval.
These are the best cookies ive ever eaten..the 1rst time i made them they didnt turn out so good but after making them over and over again..ive finally perfected it...i love leaving them for only about 6 minutes because they taste so good when they cool down and their still all mooshy and yummy:D I like adding alot of sugar and idk if thats a good thing or bad cuz sometimes it makes them not come out right:( but thank you for the recipe! its amazing ;)b
I followed the recipe exactly, but the batter was SUPER dry and crumbly. I had to mash them together to form them, and when I baked them, they came out looking raw, they never got golden brown. They were pretty good, taste wise, but I will continue the search for a great vegan chocolate chip cookie. Sorry to be negative. :-\
this has happened to me before, but I just press them into a pan and bake them and they come out perfectly. Screw trying to form cookies with the batter! :D

Absolutely amazing. These are the best chocolate chip cookies I have ever had, before or since going vegan. Normally I share my baked goods with my friends, but this time I'm keeping them all for myself. :)>>>
You might want to buy the book "RAW" and try to attempt to make those chocolate chip cookies. :)>>>
Very tasty! These cookies were moist, chewy and plump. I was very happy with the outcome, and everyone really likes them!
I added about 1 tsp of vanilla and used about 2 tsp of cinnamon. Instead of the water, I added 1/2 cup of mocha soy milk.
I give the recipe 5 stars!
