Hearty Crockpot Soup

What you need: 

1 onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can whole kernel corn, drained
2 (15 ounce) cans chopped tomatoes
2 (15 ounce) cans pinto beans (I use 2 1/2 cups cooked pinto beans)
1 cup water
1 (1 1/4 ounce) package chili seasoning mix

What you do: 

1. Put everything in a crockpot and mix well.
2. Simmer all day, about 8 hours.
I serve this with whole wheat vegan bread. This is well liked by my children, thereby making it a kid friendly recipe.

SO HOW'D IT GO?

Jeez, when you say "hearty" you MEAN hearty!  This was fantastic!!  I did tweak the recipe a little bit, instead of 1 cup of water, I added 2 cups of veggie broth.  This was amazing!  I served it w/some bread and this will feed me and my boyfriend for AT LEAST 2 nights, which is great for us and our bank accounts!  This is definitely going to be a staple of our diets from now on.
