Jake's Scrambled Eggs

What you need: 

1 pound firm tofu
1 tablespoon nutritional yeast
1/2 teaspoon turmeric
1/2 teaspoon onion powder
2 tablespoons bragg's or low sodium soy sauce
pepper, to taste

What you do: 

1. In a medium sized mixing bowl, crumble the tofu straight out of the package.
2. Add all ingredients and mix around with fork, until everything is evenly coated.
3. In an oiled skillet, cook the "eggs" for about 8 minutes on high heat, you'll know they are done when the "eggs" brown just a little.
Serve immediately!

SO HOW'D IT GO?

Yeah I know, people say this all the time, I know this recipe doesn't need another shining review, but... its fricken awesome.  I followed the recipe EXCEPT instead of using a tbsp of oil I only used 1/2 a tsp and a nonstick skillet.  Also this says it makes a few servings but no way I destroyed that scramble and don't feel bad about it since I used so little oil the calories were still under 500 for the whole thing and the total fat was also relatively low.  ;)b

These are simple, they taste fantastic and there are a million things you can add to it if you want to. Perfect!

I just made this, and it is absolutely delicious!  I will definitely be making it again soon, i bet it would make a lovely breakfast wrap with some guacamole and vegetables!

Yup, this is awesome, even with no veggies added at all.  So simple, but it doesn't really need anything else.  I ate the entire batch over the course of today--some with lunch and some with dinner. :)

I thought the two tablespoons of soy sauce would make it too salty, but it was perfect.  I used low-sodium though like the recipe said.

Made this again, but this time I added some plain yellow mustard to the mix.  A nice, tangy addition!

i love this! in addition to the braggs, tumeric, and ny, i like to add some "mrs. dash" seasoning, chopped onions, and whatever other veggies i have laying around. i eat this at least 3 times a week. so easy and versatile  ;)b

I made this today for breakfast and was VERY pleased with my first attempt at a tofu scramble. I posted a picture, non-edited, and you can see I added a bit of sauted onions and green peppers. This would have been delicious without that addition. I would recommend not using regular full sodium soy sauce as I did though (I didn't have Bragg's or Low Sodium) as it was too salty - my mistake there though.

I started off with a block of firm tofu that was 14 oz. and I took off 2 oz. for another recipe I will be making so I only used 12 oz. for this and I kept the spices exactly as stated. It was a really SIMPLE, easy dish to make. The 8 mintues is right on the money. I didn't flip it around in the pan very often so that it would get browned (maybe I went a bit overboard).

Oh yeah, I did drain my tofu with a cutting board and a can of chick peas on top so that it wasn't too liquidy. Perfection!

Oh, WOW...this was DELISH!  My first Tofu Scramble, and this may be the only Tofu Scramble recipe I ever need.  I couldn't believe that even the kids (ages 6 & 3) ate EVERY bite...and then asked for more.  Great recipe! ;)b

i've made scrambled eggs like this so many times!  lately i've been making omelets.  i got a recipe from the book "skinny bitch in the kitch".  it's actually really good, a little tricky.

it's basically the same as this except you add ener-g egg replacer and shredded cheese to the mix.  once the mix is cooked like scrambled eggs, you press it all down flat in one big circle.  you let it cook into one big solid piece for about four minutes (until it will slide out of the pan in one piece) and  right before you are done you add the sauteed veggies, cheese, or whatever you wanted in your omelet.  then you slide it off and fold it in half or thirds.  it took me about four tries before i got it perfect, but the not so pretty ones were still yummy.  ;)b
