Jalapeno Poppers
12 jalapeno peppers
1 (8 ounce) tub vegan cream cheese (I use Tofutti)
1 cup nondairy milk
1 cup all purpose flour
1 box (5 3/4 ounce) vegan spicy shake and bake
oil, for deep frying
1. Cut the peppers in 1/2 length wise. Cut off tops and toss the seeds. Fill peppers with vegan cream cheese.
2. Put milk, flour, and shake and bake in 3 separate bowls. Dip peppers into milk then into flour. Allow to dry 10 minutes.
3. Dip in milk again then roll in shake and bake. Allow to dry 10 minutes.
4. Repeat the last 2 steps until totally covered (usually 2-3 times). Heat oil to roughly 370 degrees F.
5. Deep-fry about 3 minutes. Place on paper towel.
These are so good even my non veggie friends loved them, and all us wussies found that they weren't too spicy either. If you decide to use other flavors of shake and bake, check the labels because some are not vegan. I also don't recommend the extra crispy because it chunks up.'
SO HOW'D IT GO?
I broiled the seeded, halved peppers for about 10 minutes (as suggested above), and they were at just the right level of heat after the rest of the cooking. I opted to use a coffee mug instead of a bowl for the liquid part of the battering (I used tamari instead of soy milk), which makes it easier to coat the poppers, in my opinion. Afterwards I used a coffee mug again to dip the poppers in oil instead of deep frying them, and then baked them on a tray in my oven at around 400 for about 10 or 15 minutes.
As a genuine warning, do what the other commentators said and wear gloves. I'm not a wuss when it comes to spicy foods, but after handling jalapenos for about an hour they burned the tips of my fingers which have been hurting for the past few hours. So just as a tip, I really recommend wearing those gloves. Plus it's just a matter of time before you touch your eye when working with hot peppers, I've done it coutnless times ^^
Next thing, for those of you like me that don't like cream cheese, I used Daiya. And here's how I did it: Since the Daiya won't stick like cream cheese will, you simply melt it onto the jalapeno halves in the microwave. When the cheese melts it takes up about half of the space as before, so you gotta really pile the cheese on there for it to be ample amounts. When it is melted it stixks to the jalapeno just fine, and won't fall out even when you dip it in the milk.
These were really good! I didn't dip and re-dip several times as suggested because I didn't find that necessary. I also didn't half the jalapenos I just cut the tops off, gutted the insides and then put cream cheese in the whole pepper. These were really good, I will definitely make them again sometime!

These were fantastic! Too FANTASTIC! I baked mine, at 400 degrees for about 20 minutes. perfectly crunchy. I also dipped mine in sour cream rather than milk, so I only had to bread them once to get them coated well. Thanks for a terrific recipe! :)>>>
These were absolutely DELICIOUS! Also worrying about the health of frying them, I tried half baked/half fried. The only difference being that the baked still had a little crunch to them-- otherwise they were equally tasty and equal in heat. So good! For sure will make them again.
VeggieMommy thank you for this WONDERFUL recipe. I made my own shake n bake ^ and before cooking, I dipped them in oil (as blueskygirl suggested) and baked them at 425 for 15 minutes.

Try adding dried apricots or papaya to the foe cheese mix!! With the fake bacon the poppers have a sweet, savory, and spicy flavor. Great recipe, thanks!
