Jambalaya

What you need: 

2 tablespoons olive oil
1 yellow onion, diced small
1 green bell pepper, seeded and diced small
2 cloves garlic, minced
3 ribs celery, diced small
1 teaspoon zesty seasoning (I use Ms. Dash Zesty salt free seasoning)
1/2 teaspoon thyme
1 bay leaf
salt and pepper, to taste
1 (12 ounce) package vegan chorizo (I use Melissa's Soyrizo)
1 (15 ounce) can stewed tomatoes (I use Muir Glen)
1 (12 ounce) package vegan chicken strips (I use Lightlife)
1 cup vegetable stock
2 1/2 cups brown rice, cooked
dash hot sauce, optional (I use Chalua)

What you do: 

1. Heat oil in large skillet (I used one that I could fit the whole dish in to economize on washing dishes, just make sure it has a lid.) Saute the onion, celery, bell pepper, and garlic over medium heat until soft.
2. Add the seasonings and vegan chorizo. Be sure to stir well so it doesn’t stick.
3. Add the tomatoes, vegan chicken strips, stock, and rice, stir well. Reduce heat and simmer until thickened.
4. Serve with dash of hot sauce if desired.

SO HOW'D IT GO?

This really is as good as everyone says!!! We drizzled a little fresh lime juice on top of our individual bowls and it gave it this amazing freshness! This is going in our circulation! Thank you!

Oh my gosh this was frickin' awesome!  I left out the celery since I don't like the texture once it's cooked.  I used about two cups of veggie broth, then added a small can of tomato paste mixed with "chicken" stock to the broth.  I used TJ's soyrizo, LightLife chicken strips, and sliced Tofurky Italian sausage for the meat, and about two and a half cups of rice.  I didn't add the hot sauce to the pot, since my fiance can't take the heat, so I added it to mine afterwards, and it was AWESOME!!!

This was absolutely amazing!!!  My mother-in-law learned to make jambalaya in New Orleans and makes a vegan version but this recipe came out way better.  She is a certified chef too and really knows her way around the kitchen.  Even my husband said this came out better than his mom's vegan and non-vegan recipe (this was several years ago). 

I didn't use the Mrs. Dash but the soyrizo had so much flavor that I don't think you would have been able to taste it if I did add it.  I bought a Follow Your Heart "chicken" and cut it into bit size pieces.  This was out of this world delicious.  I recommend everyone make it and try it.  You'll love it!!

I kind of mixed this recipe with the recipe here-  http://vegweb.com/index.php?topic=18009 , and it came out excellent!  ;D I didn't use Soyrizo or chicken strips, but I added zucchini and carrots and I stewed my own tomatoes by cooking 1 and half fresh tomatoes and a can of diced  for 10 minutes. Instead of Mrs. Dash, I used some of this seasonig-http://www.recipezaar.com/22089.  I served it with garlic bread because I was craving it. ;)

Two big thumbs up!! I subbed the following: orange pepper for green pepper; I used soyrizo but not Melissa's brand - it was some brand I found at Wal-Mart, but I can't remember the name; omitted chix strips; omitted hot sauce. Otherwise, followed as directed and served with green beans. This was great! Spicy but not too much so. I'll definitely be making it again! I might add some more veggies next time though to make it a little more wholesome.

This was fabulous.  My tweaks:  I used Boca italian sausages (all four in the box) instead of the soyrizo and chicken, I did use 28 ounces of stewed tomatoes (so 1 big can), and I found a recipe for "cajun seasoning" (paprika, cayenne, garlic powder, thyme, oregano, salt, pepper) that I used in place of the spices listed -- about 2 teaspoons total. 

All in all, this was really great and we will definitely have it again.  Thanks for submitting it!!

My omnivore boyfriend loves when i make this jambalaya for him. I also used Italian Style Tofurkey sausages, no fake chicken (unavailable here), and used chilli spices instead of the Ms. Dash. Mmmmmmmmm soooo good.

amazing!!!  i can't get soyizo here so i used tofurky italian sausage and added lots of cayenne pepper.  so good!  thanks!
