Jennys Easy Tomato Soup

What you need: 

1-15 oz can diced tomatoes
1-15oz can tomato sauce (generic is generally lower in sodium)
1 fresh tomato, diced
Water
1-2 teaspoon Tabasco sauce (optional)
2-3 minced garlic cloves
Italian seasoning, parsley, salt, pepper to taste

What you do: 

Throw everything in a pot except water. Once all is warmed through, add water until the flavor is mild enough for your taste. Allow to cook for about 30 minutes.
Add soup to blender and blend until smooth.
Serve with a toasted tortilla or saltines. Goes GREAT with a salad - the veggies cool off the Tabasco bite.
Enjoy! (Also good as a start to a meal as it fills you up with virtually no calories so that you eat less of the meal.)

SO HOW'D IT GO?

Wanting something comforting, warm, and easy, but not having a lot to work with in the pantry, this was my go-to recipe. I sauteed 1/2 diced onion and the minced garlic and then added everything to the pot and followed the directions from there. I added about 1/2 tsp. oregano and 1/4 tsp. basil, but left out the fresh tomato. This was really delicious and much better than the tomato soup you get from a can! Thanks for sharing!

this was the first tomato soup i handmade that i actually liked... i added half a diced onion which i sauteed first... i think the Tabasco is what did the trick it gives the soup a good flavor :)

i was planning on making a grilled tofutti cheese for dinner and as soon as i saw the new review, i had to make this soup. i am so glad i did! i used one can of muir glen basil and garlic diced tomatoes and an 8 oz. can of tomato sauce (this was all i had, but i liked it thick and chunky) a  homegrown tomato, garlic tobasco, sea salt, cracked black pepper, and dried oregano. i am in love! it was so flavorful and was so decadent for such a simple tomato soup!

Yummmmmy! This was great, simple, and comforting. I sauteed about 5 cloves garlic, then added a 28 oz can of chunky organic tomato sauce, 3 roma tomatoes, oregano, garlic salt, basil, onion powder, and parsley on top. Perfect with a grilled cheeze. :hotforyou:

This soup was really good, especially when I was in a bind and had hardly any food in the house or money. The only changes I made were instead of the fresh tomato (didnt have one, like I said, broke and foodless) I used a can of stewed tomatoes instead. I also added whatever I had left of a can of chickpeas to bulk it up a bit. All in all a pretty solid dish regardless of whether you're desperate or not!

This soup is so yummy, and it was really quick and easy as promised!

I made a couple of changes to make extra, even tho there are only four of us, I'm feeding really hungry twenty two year old twins!
The changes were:
I used double the tinned tomatoes,
and ,(we aren't vegan), I added a tin of cream of mushroom condensed  soup.
It was a real hit. We ate every last drop.

This was fresh tasting and scrumptious.  I used extra garlic, a splash of red wine and a pinch of brown sugar.  The hot sauce adds a perfect amount of heat.  Delicious.

This soup is quick and delicious! I love it, and I'm not a fan of tomato soup typically.

This is really easy and really, really good.  I had a craving for thick, smooth tomato soup and this turned out perfectly. My husband and I ate the whole pot in one sitting! The only change I made was the addition of about 1/4 of a sauteed onion.
