Julies Broccoli with Garlic Sauce

What you need: 

5 cups water, divided
1 1/2 cups uncooked white rice
1 vegetable stock cube
1 head garlic, minced
1/8 to 1/4 cup soy sauce
1 teaspoon powdered ginger
1 teaspoon to 1 tablespoon red pepper flakes
1/4 cup sweetener
3 medium heads broccoli, chopped to bite sized pieces
1 tablespoon cornstarch + 2 tablespoons cold water

What you do: 

1. First boil 3 cups water for the rice. Add rice, cover and reduce to a simmer until done, according to package directions. Boil 2 cups water and add the vegetable stock cube.
2. Stir to dissolve, and add the garlic, soy sauce, ginger, red pepper flakes and sweetener. Cook the broccoli over high heat in a large skillet for 2 minutes.
3. Add the garlic mixture. Let this simmer over medium high heat for 7-10 minutes depending on how crisp you like your broccoli.
4. Add the cornstarch mixture and stir to distribute it. Cook for 1-2 minutes more or until it thickens. If you like, you can dissolve more cornstarch in cold water to make it even thicker.
5. Place rice in bowls and top with broccoli and garlic sauce mixture.
Enjoy!

SO HOW'D IT GO?

Yummy.  I added green onions to the sauce as well and cooked it for a while before adding the brocolli.  I definately want one of those garlic presses that doesn't require peeling the garlic.  I also added a tablespoon or two of olive oil and omitted the ginger, because I don't like it unless it's in a cookie.  I will make this alot.  Who needs takeout?

My friend and I have been getting together and cooking vegan meals. I am not vegan, but she is and she doesn't know a lot of recipes so we cook a new one every week. This was the first thing that we made and it was so good! I would deffintly say to cut down on the red peppers as it was a bit spicey, but the taste was really good! I will be making this on my own at home too! It was so easy to make! Thanks for the recipe

I thought this was actually a little bit bland, but with a little tweaking it's a pretty yummy recipe when you're in the mood for a simple stir fry.

I finally tried this the other night and it was great...even my kids loved it!  I added peapods and bok choy and served it with the "simple baked tofu" recipe on this site.  Yummy!

This was really good! And easy, which is possibly most important to me  :)

I used 6 garlic cloves and 1 tsp of red pepper flakes. It was spicy, but not too much so. I also added some Trader Joe's "beef" strips to make it more of a beef n' broccoli type dish which worked out really well, served over brown rice!

I made this last night.  It was immensely delicious.  The recipe called for just the right amount of spices.  DELICIOUS!

LOVED this recipe!  I made it for my son and me, and used broccoli and cauliflower for the vegetables.  Broccoli is one of the few vegetables my picky-eater son likes, and I figured cauliflower was similar enough that he'd probably like it okay.  Fortunately, I was correct, and he liked the recipe a lot as well.  I'm hoping that as he learns to like more vegetables, I can get him to go vegan.  He is and always has been vegetarian, a compromise with his omni mom.

Yay! I've been looking for a good sauce and here it is. We all loved it. I followed the recipe except that I used a bag of frozen stir-fry veggies. Everyone loved it. I will be making it again and possibly take photos before it's all gone :)  Thanks for sharing.
