Julie's GOTJa Spread
2-4 cloves garlic
1/2 large onion (sweet or red is best)
2 tomatoes
2 jalapenos
1/8-1/4 cup flax oil
garlic salt (to taste)
pepper (to taste)
bread of your choice
butter alternative
(The GOTJa part comes from the garlic, onion, tomato, and jalapeno acronym.)
Start by chopping all of your veggies. Cut garlic and jalapenos approximately same size, and onion and tomatoes same size. Combine them in a large bowl and add flax oil (***Flax oil is recommended because of its high omega acid content, and is more nutritious at cold temperatures than olive or canola***), garlic salt, and pepper. (Add the garlic salt and pepper to your preferred taste). Mix thoroughly, but not too hard, try not to mash the vegetables.
Toast your bread (rosemary sourdough goes very well with this) and spread gently with butter substitute.
Finally, spoon the GOTJa mixture onto the bread and enjoy a yummy, quick dinner!
