Just got in from a wet walk with the dogs Hotpot

What you need: 

4 potatoes
1 tablespoon oil for sautéing the onions (& garlic)
1 onion
1 clove garlic (optional)
handful mushrooms (optional)
8 veggie sausages
1 can baked beans
1 can kidney beans (optional)
1 can tomatoes (already chopped will save time)
1 tablespoon tomato puree (optional)

What you do: 

Firstly, get the potatoes on the go for the accompanying mashed potato. If your kids will allow, leave the skins on as more nutrients are maintained. Likewise, the larger the pieces, the more nutrients maintained BUT the longer they will take to cook.
Next. Halve the onion and then slice so that you have semi circle onion rings. In a large frying pan, sauté them with the garlic if you are using until translucent.
Add the sausages either to the frying or if you are being more health conscious - under the grill - until they are nicely browned round the outside. This is necessary to stop them absorbing the liquid later and becoming soggy.
Add the can(s) of beans, tomatoes and tomato puree (if using) to the pan and hold at a fast simmer for as long as your tummy will allow! The longer it simmers, the thicker the sauce becomes. You can speed this process up by adding a little arrowroot or cornstarch. (remember to mix it up in a little cold water first then add to the hot liquid to prevent it from forming lumps.)

SO HOW'D IT GO?

I just made this as a quick lunch and i made some modifications
Instead of the veggie sausages and fried up some floured tofu instead
left out to tomato puree and baked beans, and added some carrots and put it over instant brown rice
I also portioned it down cuz it was just me eating

it was amazing, I gobbled it down in like a minute. Even my mom stole some and she hates tofu. (she didn't complain this time).

I made this & it was robust & yummy. My Omni boy wasn't fussed with she vegan sausage but I loved it, & his omni mother who always seems wary of my cooking LOVED it. Thanks much!

This was absolutely delish! I scarfed this down and the leftovers were just as good the next day! I forgot the red beans but I used chickpeas and it tasted good to me and my fiance. I added Italian spices to the mix. Great recipe!
