Kick A__ Apple Pie

What you need: 

FILLING:
8 Braeburn apples peeled and quartered
2 cups apple cider
1/3 cups turb. sugar
3 tablespoon cornstarch
2 teasp. vanilla extract
1 teasp. ground cinnamin
CRUST:
1/3 cup ice water
1/2 teasp. salt
1/2 cup chilled stick of margarine (kosher) cut into small pieces
cooking spray

What you do: 

CRUST:In a large bowl sift in flour and salt. Cut the chilled margarine into 1 tblspoon bits and add to the flour. Work pastry cutter, work flour and marg. together until mixture resembles coarse meal. Add the ice water litle by litte pressing dough into a ball. cover and chill for about 1 hour.Divide pastry in half and roll each out on a floured surface. It should end up being slightly larger than your pie plate.
Bring apple cider to a boil in a saucepan over high heat. Reduce to 1/2 cup and cool completely. In a mixing bowl combine cider, vegan sugar, cinnamin, cornstarch,vanilla and apples. (apples should be quartered and then cut crosswise into 1/4 thick slices. After One of the rolled out pie crusts is in the pie plate add the apple mixture. Add the Other rolled out dough and press all the edges together. Fold edges under and flute. Cut a few slits into the top of pastery with a sharp knife. Brush pie with water and a little olive oil and sprinkle with vegan sugar. Bake at 450deg. for 15 min. Reduce oven temp. to 350 deg. without removing pie from oven. Bake an additional 45 min. Cool completely before covering, or serve warm.

SO HOW'D IT GO?

i make this apple pie every year for thanksgiving and/or christmas and it always turns out wonderful!  i love the addition of the cider (even though it takes a while to boil it down).  everyone eats it up!  yuuuum!

i have this year's pie in the oven as i type.  can't wait til tomorrow! <3

I made this for Thanksgiving and no one ate it.  :(  I was pretty sure I followed the recipe exactly, but everyone thought it was kind of...yucky.  The apples didn't get soft enough to eat, just kind of rubbery, so if I tried it again I would probably pre-boil the apples in the apple juice for a while to soften them up.  I think it could stand to be a smidge sweeter, as well, but that could just be my personal pie taste.

this was really really good apple pie. Instead of apple cider, I used Trader Joe's spiced cider though, and it was great!!

I didn't need 8 apples to fill my pie shell though... :-\

I did have alot of extra apples, so I just made a small apple crisp on the side.  I didn't make my own crust (i just bought a vegan one at whole foods), so I just made a cruble using oats, WW flour, sugar, cinnamon, applesauce, and a bit of rice milk.

I tried the apple crisp one, and it was really good, so the pie must be too. We just haven't cut into the pie yet to eat it...I stole a bit from the crisp before dinner, it's yummy  :D

The 8 apples the recipe called for did not fit into my frozen pie shell!! I don't know what kind of pie you guys had, but how in the world could you fit all those apples into ONE pie shell!!

Its baking right now and I'll write back on how it tastes...............

This is my standard apple pie recipe, but with a few changes:

- I used "spiced" apple cider (from TJ's), and not plain
- I add a few other spices too, like nutmeg and cloves
- i use a different recipe for the crust (found on vegweb as "oil pie crust (no margarine!)" since I've had bad luck with this one.

This pie could get a anti-apple pie person to like apple pie. Seriously. Something abou the braeburns...
