Kick-Ass Molasses Cookies

What you need: 

1 cup packed brown sugar
3/4 cup canola oil
1/4 cup molasses
3 tablespoons Ener-G egg replacer
2 1/4 cups unbleached all purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 tablespoons sugar

What you do: 

1. Heat oven to 325 degrees F. Mix brown sugar, oil, molasses, and egg substitute in a large bowl with an electric mixer on medium. You can also mix with a spoon, but it's better when it's really whipped up.
2. Stir in the rest of the ingredients except the vegan sugar. Make tablespoon sized balls of dough and roll in the sugar.
3. Place cookies 1-2" apart on ungreased sheet.
4. Bake for 13 to 16 minutes or until set (appears dry). Let cool for 1 to 2 minutes and place on wire rack or a plate is fine as well.

SO HOW'D IT GO?

I followed the recipe exactly, but it didn't work out for me :-/

I followed the recipe exactly and I think these are very good. I baked the first two trays for sixteen minutes, and they came out a bit crunchy. At thirteen minutes the texture was perfect, just chewy enough. The only thing I didn't love about them was that you could really taste the oil, so I might try half oil and half applesauce next time and see if they still come out right. I loved the spiciness of these, I think they'll be a hit at French coffee hour tomorrow. :)

Absolutely amazing! This recipe really lives up to its name.

I did as one reviewer suggested and used 2 1/2 T. flax with 7 T. water as the egg replacer.

Ok, so this recipe really does....uh....KICK ASS. They turned out perfect. I used 1 tablespoon egg replaces and two tablespoons of water. I also chilled the dough over night, as it was very soft. I rolled them in some course turbinado sugar and they turned out so beautiful, and yummy.  ::)

This recipe was great - it was simple and delicious! I am not a fan of recipes where I need to open up a fresh block of tofu just to use three tablespoons of it. Anyway I made these with 1/2 cup applesauce and 1/4 cup oil instead of all 3/4 cup oil, and I read the recipe literally and just measured 3 Tbsp of the dry Ener-G powder right into the mix without adding water to it. They turned out soft and almost cake-y!  :)>>> Yum!

I recently made a couple batches of these cookies for our community garden harvest celebration. They were so easy to whip up and have a great taste and texture. I like my cookies softer, and they do firm up quick, so I only baked each tray for 10 minutes.

oh yes...i also used baking powder instead of soda..added a little soda to supplement :) just in case anyone else is careless like me - don't worry! :)
