Late Night Single Serving Oatmeal Apple or Pear Crisp
cinnamon, to taste
nutmeg, to taste
sugar, to taste
pinch salt
1 apple or pear, bite sized pieces
1 (1-ounce) packet oatmeal (I suggest maple spice)
1 tablespoon vegan margarine
1. Preheat oven or toaster oven to 350 degrees F. Sprinkle sugar, cinnamon, salt and nutmeg, to taste on apple or pear, and mix with fingers.
2. Add to a small baking dish like a single serve Pyrex dish.
3. In a small bowl, empty oatmeal packet and add margarine. Mix with your hands until oatmeal is completely mixed. Pour over the cut apple or pear.
4. You can bake this in a conventional oven or toaster oven. I used my toaster over. Bake for 15-20 minutes or until the crust is lightly brown. Remove from oven and let stand a few minutes, then serve.
Tastes really good with vanilla soy ice cream or soy whipped cream.

This is excellent. I topped it with a small scoop of ice cream, and it's melting onto it as I type this. I've had a few bites of it, and I had a hard time putting the spoon down long enough to write. I'll have to give this a shot with apple sometime soon - I had some pears so I made it with that. I had no nutmeg, and I have whole rolled oats in a big container (not the little packets called for in here) so I added some maple syrup to the oats/butter mixture, and it still came out amazing. The other night I started making this and when I went to get my Earth Balance Margarine out of the refrigerator I realized I didn't have any. I used Toffuti cream cheese instead and it came out great. I just wanted to share that in case anyone else is in the same boat as I was. I hope you like it.
