Layered Vegetable Casserole
What you need:
potatoes
carrots
green Peppers
mushrooms
celery
onions
crushed tomatoes (optional)
1 can tomato soup
spices (basil, parsley, oregano, garlic whatever you prefer)
What you do:
Use as many vegetables as you need to fit the chosen casserole dish.
After you wash, peel and slice veggies, layer in a casserole. Between each layer, pour some soup and sprinkle with spices. Repeat until you fill dish, leaving a little room at the top.
Cover and cook in the oven at 350F for 40-50 minutes or until heated through.
This was adapted from my a friends mothers recipe, very yummy, filling and can be varied with whatever veggies you like. YUM!!

SO HOW'D IT GO?
I have had this in the oven over an hour now. Waiting for the veggies to cook. Looks very soupy.. It smells awesome. Wish I could taste it. Maybe for tomorrows dinner.
its good and since i used a whole 32oz box of soup which i totally think it needed, it is just basically a soup, so next time i will just pour the soup in a pot and add veggies and it will cook in less time. in the casserole dish it took 2hrs for the carrots and broccoli to cook and i just realized the thinly sliced potatoes are not cooked all the way through so *sighs* i give up. But I will make again but make in a pot as a soup :-)
This is a great vegetable casserole! It seemed like it wasn't liquid enough, so I added another can of soup to it. It got a little juicy, but I think it will be great reheated. I used garlic-herb seasoning in the layers, and I added breadcrumbs to the top. Next time I'll add beans and maybe top with cheese. Yum!
this is a good base recipe - I like seeing everyone's modifications. I made it with potatoes, carrots, mushrooms, zucchini, beans, onions, garlic, and fresh basil. funny how just a can of tomato soup can make everything taste good (with salt and pepper added).

i made this and put it on spaghetti noodles, it was terriffic!
I decided to make this tonight with onions, garlic, potatoes, broccoli, zucchini, celery and carrot. Yum. :) I seasoned with oregano, parsley and basil and smooshed some crackers on the top. Only thing I'll do next time differently is add maybe a little more spice and some BEANS!! Then it will be world class. :)
