Lazy Yabbit Hot and Sour Soup

What you need: 

2 tablespoons oil
1 medium red onion, thinly sliced
2 to 3 large oyster mushrooms, cut in strips
2 cloves garlic, mashed
1 cup frozen mixed stir-fry veggies
2 cups vegan chicken broth
1" fresh ginger, diced
2 tablespoons soy sauce
2 tablespoons white vinegar
large pinch white pepper
1 tablespoon shiro miso paste, optional

What you do: 

1. In a soup pot, heat the oil and sauté onion, garlic and mushrooms until they collapse. Add frozen veggies and stir-fry some more.
2. Except for the miso paste, add remaining ingredients and bring to a boil.
3. At the table, place the miso in your bowl or cup. Add the soup and mix well. Eat and feel comforted and happy.
I added some yam-flour noodles to this the first time I made it and they took up a lot of the broth. If you are going to include any pasta, figure in another cup or so of broth.

SO HOW'D IT GO?

Thank you so much yabbitgirl!  I've been feeling awful for the past 2 days and was really craving some "real food", you know, for comfort.  But I didn't really have the energy to stand in the kitchen and chop a ton of stuff and cook and everything.  This recipe is simple and satisfying:)  I followed above poster and added some crushed red pepper with the onions and everything, used button mushrooms, and added another cup of broth cuz I really wanted a liquidy soup.  It is delicious, and I feel so much better.  Oh Yum:)*  :)>>>

Wonderful! I made this tonight for dinner, and had the weirdest thing happen. I only had cooking onions left, and I *really* wanted a red onion for it, then I cut into this regular-looking cooking onion and it... turned out to be a red onion. Completely red onion in colour taste. Does this happen to anyone else, or am I just super lucky?

Anywho, it was tangy and spicy (I fried the onion with about 1 tbsp dried chilis) and since I've been feeling like I'm coming down with a cold, it really did the trick to kick off my symptoms ^^ I didn't use frozen veggies, though, I just quickly diced up some carrots and celery, threw in some frozen corn for good measure (gotta love livin the broke college student lifestyle! Hahahaha) and just used regular mushrooms instead of oyster mushrooms. But it was truly wonderful, thank you so much for the recipe ;)b
