Lentil and Rice Soup

What you need: 

olive oil, as needed
1 medium onion, finely chopped
1 medium potato, finely cubed
3 cloves garlic, chopped
1 (14 ounce) can diced tomatoes
1 cup red lentils, washed and drained
2 tablespoons rice, washed and drained
1 teaspoon chili powder
4 1/4 cups vegetable stock

What you do: 

1. Fry the onion, potato and the garlic in a saucepan with oil for a few minutes. Add the tomatoes and simmer for a few more minutes.
2. Add the lentils, rice, chili powder and vegetable stock and mix well. Cover and simmer for about 45 minutes, stirring occasionally.
3. This makes a very thick soup (pretty much a full meal in itself), so if you prefer, add some more water to thin it down a bit.
