Light, Berry Flax Brancakes
1/2 cup all-purpose flour
1/2 cup buckwheat flour
3-1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon brown sugar
1 tablespoon ground flaxseed
2 tablespoons wheat bran
3/4 cup soymilk
3/4 cup water
Egg substitute for one egg
1-1/2 tablespoons vegan margarine, melted
1 teaspoon vanilla
1/4 cup mixed berries (whatever fruit/berry combination desired)
1. In a large bowl, sift together the two types of flour, baking powder, salt, brown sugar, flaxseed, and bran. Make a well in the center and pour in the soymilk, water, egg substitute, melted margarine, and vanilla. Mix until smooth and gently fold in berries.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot. Top with fresh fruit mixed with agave nectar or maple syrup and orange zest. Be creative!

Im not a pancake/waffle person (I was one of those crazy kids who ate nothing but hot cereal for breakfast) but I made these for my bf and he loved them. My only sub was 2 tbsp flax and 1 tbsp wheat germ, because I don't have any bran right now. Thanks for the recipe!
