Lime and Cracked Pepper Quinoa
3/4 cup quinoa (dry)
1 lime
cracked black pepper, to taste
1-1/2 cups water
Rinse quinoa with cold water. Zest the entire lime, setting aside the fruit portion for later. Put quinoa, zest, and 1-1/2 cups of water in a sauce pan. Bring to a boil, then reduce to a simmer, and cook for 20-25 minutes, or until most or all water is absorbed. Add cracked pepper to quinoa halfway through cooking, or when at least half of the water has been absorbed.
While quinoa is cooking, cut remaining lime fruit into nine slices (or however many slices you like). Spoon finished quinoa onto plate. Garnish each serving with three limes and an extra shake or two of cracked black pepper.
I like squeezing the juice of the lime slices over the quinoa but that is optional. The lime slices taste great when they've been heated by the quinoa and have black pepper on them.
