Luscious Coconut Bread
1 cup unsweetened coconut
2 cups unbleached flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup nondairy milk (I use soy)
1 1/2 teaspoons Ener-G Egg Replacer + 2 tablespoons water
2 tablespoons canola oil
2 tablespoons unsweetened applesauce
3/4 cup sugar
1 teaspoon vanilla
1. Preheat the oven to 350 degrees Fahrenheit. Toast the coconut in a dry skillet on medium heat until it begins to brown. Stir a few times, to brown evenly and prevent burning. Keep a close eye on the toasting coconut because it'll burn quickly after it begins to brown. Immediately remove from heat when it browns. Lightly grease a bread pan.
2. In a bowl, combine the dry ingredients, including toasted coconut. In a separate bowl, mix together the wet ingredients. Add wet ingredients to dry ingredients, and stir until blended.
3. Pour into prepared bread pan, and bake until a toothpick comes out clean and loaf is lightly browned (about 45 minutes). Remove from pan and cool on a wire rack.

I actually made this bread last summer, and forgot to comment on it. It was VERY good! The only reason I haven't made it since then, is because I haven't had an oven for about 8 months now. I didn't find it too sweet, even though I don't mind sweet. My husband and I pretty much ate the whole thing in about 2 days TOPS. I will definitely be making this again! As soon as I get an oven :P I didn't use the Ener-G "eggs", simply because I can't find Ener-G around here, but I had some other stuff, and it was still good.
I have also given the recipe to my Mom, who isn't vegan, or even vegetarian (so she made it with regular milk and eggs) and she loved it also! Awesome recipe.

However, I made some modifications. I am lacto - ovo, and my friend was kind of weirded out when she read the recipe and saw egg replacer. We put one egg in and it was good. We also thought it needed a tiny bit more sweet to it, so we mixed the extra coconut and some icing sugar and sprinkled it on top, but it made it quite messy, so next time I will put in 2 tablespoons of icing sugar in before we mix.

Wow. 2 thumbs up! My boyfriend doesn't like dessert OR coconut, but he LOVES this bread! As for me, well I essentially ate this for dinner last night... it was sooo good :D
I cut the sugar down a bit --> 1/4 cup agave nectar + 1/3 cup brown sugar, but it's still just sweet enough! I also used half ww, half white flour.

Thanks for the recipe! I only had sweetened coconut so I used less sugar. The bread was delicious, and it was much lighter (not dense) than I expected. I will be making it again.
OH! And I meant to add that I used a "flax egg" instead of the EnerG and, obviously, it worked well.
This was SO good!! I made some changes: I used coconut milk, instead of soy, added cinnamon, nutmeg and cracked pepper, added coconut extract instead of vanilla and made 6 relatively large muffins because I can't seem to find my loaf pan. I cooked them for about 30 minutes or so.
I can't wait to make this again!!

Delicious! Five stars!!! I absolutely love this loaf. I have used it in two bake sales, and both times it sold out.
Alterations: I used 4 tablespoons of appleasauce and dropped the EnerG. I also made this recipe in a bread machine on a quick bread cycle, adding the coconut flakes per my machine's instructions. For extra coconut flavor, I added in a teaspoon of coconut extract.
This recipe saved my a** on late nights of fervent baking for last minute bake sales. I toasted the coconut, threw the ingredients into the bread machine, and sliced the lusciousness into about 8 slices and bagged them up when it was done. Thanks for a wonderful recipe!
This was tremendous! I forgot soy milk and vanilla at the store, so I used almond milk and vanilla extract and it turned out wonderful! I'm taking this to work today so I won't eat the whole thing! Thanks for the recipe!
