Mango and Coconut Cake

What you need: 

1 1/4 cups flour
2/3 cup sugar
1/4 teaspoon salt
1/2 teaspoon ground ginger
1 1/2 teaspoons baking soda
1/2 mango, cubed
3/4 cup nondairy milk (I use soy)
1/3 cup vegetable oil
3/4 teaspoon vanilla extract
coconut, for topping

What you do: 

1. Preheat oven to 350 degrees Fahrenheit and grease a round baking pan. In a bowl, combine the flour, sugar, baking soda, salt, and ginger. Mix thoroughly and create a well in the center.
2. Place the milk, oil, mango, and vanilla in the well and mix gently till homogeneous.
3. Pour into prepared baking pan and top with coconut. Bake for 27 to 30 minutes.
Enjoy with coffee, tea, or soy milk!

SO HOW'D IT GO?

Okay , just had a slice, very good.  Its not very sweet which I like.  I will def keep this recipe.  I did add a little cinnamon mmmmmmmmm :)>>>

I just made this it smells really good and looks nice, the coconut toasted really nice. I hope it taste as good as it looks.  :P

I made this for Mother's day and my mom absolutely loved it. My farmer's market didn't have mango so I put in peaches instead, also because my mom enjoys peaches a lot more than she does mango. But, I'm thinking of re-making this for Father's day and finding some yummy mangos to go in it. Definitely keeping this recipe considering how easy it is.

Yummers!  I used canned peaches and had to bake about 12 minutes longer than directed, but the result was fantastic!  I love the idea of putting coconut on top instead of frosting, makes it extra special!  Thanks!

This is delicious. It was crispy on the outside and moist on the inside. So... I'm not sure how to remedy that, but I do love the texture either way. My parents, who are usually very picky, loved it as well. It was my 21st birthday cake. :) Thanks.

Very good!  More of a breakfast cake, I'd say, kinda like coffee cake...
I used a whole mango, only 1 tsp baking soda, coconut 'beverage' instead of my regular almond milk and half oil, half applesauce.  I added some coconut to the mix and some on top.  After eating it, I think I'll omit the coconut from the top and just sprinkle it with powdered sugar instead.

OOOohhhhhh, fabulousness!! I used all whole wheat, so my cake was darker and not as pretty as the ones others have uploaded. I used a 1/6 cup of sugar with a few drops of liquid stevia added to the wet ingredients, a whole mango (what didn't get eaten in the process, anyway), and I subbed coconut milk for 1/2 of the soy milk. Divine results!!! Thanks for this recipe! If not for the people on this website I would live on sauteed tofu/onions and rice :D.

This was quick, easy and soooo good! It's not really fruity so if you want something more fruity maybe use applesauce and banana or something but as is, this cake is awesome! I took everyones suggestion and only used 1tsp baking soda and I think you could even go down to 1/2tsp probably. This not insanely sweet which is fine with me because it's just how I like it. I also used almost a whole mango in it.
