Maria Agusta's Quinoa Soup

What you need: 

1/2 cup quinoa

1 teaspoon achiote powder
3 potatoes, diced
2 carrots, chopped
1 onion, chopped
1 vegetable bouillon cube
5 cups water
1 tablespoon oil
Salt to taste
What you do: 

1. Put the quinoa in a large bowl full of water to soak and set aside.
2. Heat the oil. Add the achiote powder, onion, and bouillon. 
3. When the onion is golden brown, add the water and bring to a boil. When the water is boiling, add the carrots and salt. 
4. When the quinoa starts to uncurl in the water, drain the water in the bowl and add the quinoa and potatoes to the pot of boiling water. Boil for ten minutes or until potatoes are soft.
