Mexican Pizza
burger style crumbles
refried beans (make sure they are vegan!)
flour tortillas (2 per pizza)
vegetable oil
salsa
chili powder
vegan cheese, shredded or sliced thin
This recipe makes a Taco Bell-style Mexican pizza. You will notice that I do not include amounts in the ingredients list; I do this because this recipe should be made to suit your tastes.
Preheat oven to 350 degrees Fahrenheit (177 C). brush tortillas lightly with oil on both sides and bake 6-7 minutes or until desired crispness. (You can get a taste closer to taco bells by lightly frying the tortillas instead of baking them.)
Mix beans with vegan burger style crumbles and chili powder to taste (I use about 1/4-1/2 cup each, of burger and beans).
Take tortillas out of oven and change temperature setting to broil.
Spread a thin layer of bean mixture onto a tortilla, then top with the other. Spread salsa on top and then cheese above that, and place under broiler until melted, about 1 minute. Watch it closely-these burn easily.
