Microwave Snack Cake
cooking spray
1 medium ripe banana, mashed
1/4 cup unsweetened applesauce
1/4 cup canola oil
6 tablespoons granulated sugar
6 tablespoons light brown sugar
1/2 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup vegan chocolate chips
1. Spray an 8x6x2 (6 cup) rectangular microwave safe baking dish with cooking spray. In medium bowl, combine mashed banana, applesauce, oil, sugars, and vanilla. Mix well.
2. Add flour, salt, and baking soda to the banana mixture until combined. Fold in chocolate chips.
3. Spread evenly into prepared baking dish and microwave on high for 5-7 minutes.
Our microwave is 1000 watts and it takes 5 minutes to bake. If your microwave doesn't have a carousel, rotate the baking dish 1/4 turn every 2 minutes.
It kind of reminds me of a cross between brownies and cake, but it's delicious!

I cut half the sugar as the applesauce and banana already make it quite sweet (for a small cake).
Also just a warning, the texture of the cake is a bit rubbery, which I imagine is due to the applesauce and microwaving but it didn't bother me much because of how incredibly fast it was and still quite tasty.
Sounds lovely but does anyone know how to cook this in a normal oven- how long for and what temperature? And is there an easy alternative to apple sauce, like maybe extra banana and a bit of juice or something? Thanks! :)
Made this today...its brilliant. As a college student its hard to keep on the veg track...but this helps alot!!! It dawned on me though....mabey I could make cupcakes from this recipe??? They would be great for parties...Any who, the recipe rocks.. thanks!!!
I just made this cake for the second time in three days. It's sooo good. My kids like it and I love it! It was quick to prepare and only took 7 minutes in the microwave. Yummy good!
