Middle Eastern Potato Tomato Sauce Casserole
4-6 potatoes, peeled and sliced thin
2 tablespoons margarine, I like Organic Earth Balance
2-3 cans of tomato sauce
1 small onion, chopped
1 1/2 teaspoon cinnamon
1 1/2 teaspoon allspice
Salt and pepper, to taste
Parsley, optional
1. Preheat oven to 350 degrees and grease casserole pan and set aside. Sauté onion in margarine. Add 1 teaspoon of cinnamon and 1 teaspoon of allspice.
2. Add 1/2 teaspoon of cinnamon and 1/2 teaspoon of allspice to each can of tomato sauce. Add salt and pepper to taste to each can of tomato sauce.
3. In the casserole pan, layer tomato sauce (with seasonings), then potatoes, then sautéed onions, then tomato sauce -then potatoes, tomato sauce, onions, etc. End casserole with a lot of tomato sauce and onion mixture on the top.
4. Bake for at least an hour or until the potatoes feel soft. Can be served with plain vegan yogurt and/or plain rice. For looks - you can sprinkle chopped parsley on top.
SO HOW'D IT GO?
Morningstar farm grilled crumbles are not vegan, learned that the hard way. Why they have to add milk to them I don't know.. Can't wait to try this recipie! I might add soy sausage. Wegmans has a good vegan one.
This recipe was amazing. I added nutmeg, & used one can of tomato soup (condensed) & one can of diced tomatoes as opposed to the tomato sauce - Iit was absolutely delicious. (:
Ended-up having a different flavor, but that flavor was quite pleasing. I think I will go for the 3 cans of tomatoe sauce versus the 2 next time.
Sounds a lot like a dish I had in Egypt, can't wait to give it a try :)
This sort of reminds me of Moussaka, tastewise. To that end, I layered some roasted red peppers and eggplant in there and doubled the onions, and added garlic. It was quick and easy and tasty.
This recipe was great!
I made a few modifications of my own, though.
I added a few more spices to the mix like curry, nutmeg, and sage, and then when there were only twenty minutes left out of the 1 hr cooking time, i added some soy cheese on top. The top was delightfully crispy and crunchy.
Also, on one layer, I added some Morningstar Farms griller crumbles, and it gave the recipe an even more robust flavor.
The potatoes weren't done after an hour, though. They were still pretty crunchy. After two hours at 350F, it was ready.
i would have never added cinnamon to tomatoes, but it was faboulous! very unique taste.
i made my own sauce using skinnded and chopped fresh tomatoes. i would also triple the onion, because it tasted great.
i microwaved the whole thing for 20 minutes on 100% and sprinkled linseed (flax-meal) on top.
