The Most Fabulous Frozen Chocolate PB Cookies on Planet Earth!

What you need: 

1/4 cup light soy milk (try to use plain b/c cookies could be too sweet if you use sweetened milk)
2 tablespoons cocoa powder (unsweetened)
2 tablespoons sugar or vegan artificial sweetener equivalent
1/4 cup natural peanut butter (sweetened is OK, if unsweetened, increase the amt of sugar accordingly)
1 cup uncooked oats
2 teaspoon olive oil

What you do: 

Add soy milk, cocoa powder and vegan sugar (or substitute) in a small NONSTICK saucepan over low heat, and stir often until sugar dissolves and all ingredients mix nicely.
DO NOT BOIL (soymilk will curdle and that is ICKY my friends!), but make sure it gets very hot. Remove from heat. Add peanut butter and stir into mix until melted.
Stir in oatmeal and oil.
Drop with a greased tablespoon into 16 balls onto a baking sheet lined with wax paper, or sprayed with nonstick spray. Freeze (covered if desired) for a minimum of 4 hours. They are better the next day after you make them.
Yes, you eat these frozen!!!!
About 70 or 80 calories per cookie and about a gram of fiber. You could play with the sweetener to desired sweetness, but I really like it this way. Enjoy!

SO HOW'D IT GO?

These are so easy to make, and can be very addictive! I used chunky peanut butter and only 1 tablespoon of oil, which seemed fine. By the way, these don't actually set hard in the freezer (they are chewy). Thanks for the recipe!

I made these with almond butter, forgot to add the oil and extra sugar. Next time I will make them with maple syrup. They froze extremely hard and weren't really sweet at all. I made a homemade fudge sauce, dipped the balls in that and rolled them in chopped almonds. Delicious.

I am addicted to these.  Seriously, it's a problem.  It's good to know that you can omit the oil and they still come out.  There's probably enough natural oil from the peanut butter to be OK.  I'm sort of curious about the nutritional info, because I'm wondering what the damage would be if you, say, ate half a batch.  Just theoretically.

YUMMY!  I cut the sugar in half which still left them plenty sweet for me as I used regular peanut butter.  These are perfect for sastifying my sweet tooth without being too horrible for me & they're super easy to make too.  Thanks for the recipe

AMAZING. i didn't use any chooclate...and didnt use as much sugar...and ended up eating a whole batch by myself D; i feel kinda fat...but oh well! i LOVED them.  :D

Great recipe, satisfies my sweet tooth without a lot of fat or sugar.  I've made this with oil, with applesauce subbing for oil, and once without oil or applesauce (I just forgot).  Honestly, I can hardly tell the difference amongst the three.  Certainly it is as good with applesauce as with oil.  However, I do add chocolate chips.

OK I made these again, and instead of oatmeal I used Puffed Kamut (although you could sub for any puffed cereal).  I think they were much "fluffier" and it felt like you were getting more cookie!

These were pretty tasty...  I used dark cocoa powder, chunky PB, and pressed a whole peanut in the middle of each cookie, just for cuteness.  They remind me of these no-bake cookies my mom used to make when I was a kid, however I never would have thought to freeze them.  Thanks for the recipe!  :)

Yummy. Not like a cookie, more like a soft praline or something. I subbed 1 tbsp of the cocoa with 1 tbsp of vanilla flavored soy protein powder. I didn't go without cocoa at all because I'm not sure there would be a lack of flavor without it, so I went half-half.
They don't freeze solid, just cold, so don't expect them to get crunchy or anything.

It was intended to be funny, since uhblondie had already played on it. I suspect that she hasn't been on vegweb since, but of course as in all things I could be mistaken.
