Mouthwatering Meatball
1/2 cup long grain rice
1 cup dehydrated TVP (textured vegetable protein)
1/2 onion, diced
2 cloves garlic, minced
oil, as needed
1/4 to 1/2 cup bread crumbs
basil, to taste
parsley, to taste
rosemary, to taste
garlic powder, to taste
oregano, to taste
salt, to taste
1. Cook rice according to directions. While rice is cooking, rehydrate TVP with water or vegetable broth according to directed on package. Cook garlic and onions in oil until browned.
2. Once rice is finished, add rice, TVP, bread crumbs, and onion mixture to a big bowl. Add all spices to your preferred taste.
3. Wash your hands and dig in, be careful, it will be hot!! Mash all of the ingredients together with your hands. You may need to add more breadcrumbs, but it will be ready when it sticks together easily without crumbling.
4. Grab a decent amount (a meatball sized amount) and start rolling your meatballs. We got about 15 good sized meatballs out of it. Fry up in a bit of oil until browned on all sides. Enjoy!!
We served these with pasta, spaghetti sauce, and garlic bread!

I would like to add that I usually bake these and they always turn out awesome. I recently fried them and they fell apart. I would recommend baking them in not too much oil. Also I want to express how much I love this recipe. Thanks again!
Good! I was dying for a "meatball" parm sandwich. I added a tsp of tomato paste to the mixture. Baked it for 15 minutes, then simmered it in marinara for about 10 more minutes. Briefly broiled the entire sandwich to toast the hoagie bun and melt the Daiya mozzarella on top. Delicious! Thanks ;)b
Followed recipe but didn't use onion and no garlic but garlic salt instead and short grain brown rice. Turned out really really good when I was tasting it before I baked the meatballs. My husband and I ate it with spaghetti pasta. I would recommend using the non-baked stuff in sandwiches and wraps!!! :D
I am going to try these. I used Good Life "beef" and it has such a funky taste to it, i'll never use that again. Sounds and looks great. I'll let you know how I make out when I do make them.

I made this recipe today (my first experience with TVP) and it was so fun and delightful! I love how the texture of the cooked onions and the rice sticks well so you don't need to use egg replacer. I made it with basmati rice and panko, and threw just a pinch of coriander in there as well. I made 32 mini-meatballs. Also, I baked them in the oven at 350 for about 20-25 min instead of frying. They remind me of a fluffy, delicate, delicious version of a chicken nugget - great with soy sauce, I bet they'd also be good with ketchup or a nice thick sweet BBQ sauce. A very versatile recipe - I'd like to try experimenting with the seasonings and maybe using millet or some other grain in place of rice. So many possibilities, so munchably delicious. really good...I added the equivalent of two eggs (flax and water) and baked them so that they would stay together. they were perfect!
I tried these... they started off good but then fell apart... they also didn't cook all the way through for me... oh well :(
maybe try using short grain rice, instead oof long. it's sticker so it holds things together well, or maybe try more breadcrumbs, it took us a few tries to get it to work, hopefully it'll work next time :D
