Mushroom Minestrone
What you need:
12 oz. (about 2 cups) sliced fresh mushrooms
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
4 cups vegetable broth or bullion
1/2 cup small pasta
16 oz. can diced tomatoes
15 oz. can garbanzo beans (chick peas), rinsed and drained
about 1/4 cup of any chopped fresh herb(s) of your choice:
(such as basil, oregeno, parsley, thyme, etc.)
What you do:
In a soup pot saute mushrooms, onion, and garlic in oil until tender. Add broth and bring to a boil. Stir in pasta and cook until pasta is al dente. Stir in tomatoes (undrained) and garbanzo beans; heat through. Just before serving stir in fresh herbs.

SO HOW'D IT GO?
I absolutely love this recipe! I have been making this for a few years, and I know I found it on here despite the review dates of 2007... I work third shift at a local hospital and I made a double batch to take in, everyone loved it. It was unbelievable how many people asked me for the recipe. I came home empty handed ;D
If you haven't tried this yet, please do. This is definitely one of my favorites!
I just started the veg-lifestyle. This is a great starter recipe for newbies. Even my two-year-old son liked it!
I cooked this today for lunch and it was amazingly simple and so good! I added a little more pasta (about a full cup in total) because I need more carbs in my diet, but I also used the healthier whole wheat pasta. I also found that the soup was too salty without the tomatoes so make sure you add them with the juice they come in (as instructed by the directions). As well, I found that the liquid didn't go very far so I added 5 cups of broth instead of the suggested 4.
All in all a quick, healthy, yummy soup great for a full tummy without spending a lot of money.
I made this soup for dinner tonight and my husband and I both really enjoyed it. I used portabello mushrooms and small shell pasta. I didn't have fresh herbs, but I had dried versions of all the herbs listed and those worked just as well for flavour.
