My Farm Zucchini Hash
What you need:
2 tablespoons virgin grapeseed or olive oil
3 cloves garlic, sliced thinly
1 cup mushrooms, sliced
1 cup cooked black beans, rinsed
2 medium zucchini, sliced 1/2" thick
1 deep red pepper, sliced into strips
1 white onion, in rings
1 tablespoon Italian herb mixture (oregano, rosemary, basil, thyme, etc.)
salt and pepper, to taste
What you do:
1. Heat oil in frying pan. Add garlic and mushrooms, beans and zucchini and saute for about 5 minutes.
2. Add red pepper, onion and herbs.
3. Reduce heat, cover and cook for another 5 minutes until vegetables are warm and aromatic. Add sea salt and pepper, to taste.
Serve with noodles or whole grain bread.

SO HOW'D IT GO?
This was a bit bland, but mixed in with some tomato sauce, it was much tastier. I added lemon juice and some spices in an attempt to liven it up, but I think zucchini just needs tomato sauce. I used white beans. It was a nice way to use and eat my vegetables!
