No Bake Peanut butter Chocolate Oat Cookies

What you need: 

1/2 cup margarine (I use Earth Balance)
2 cups sugar (white or brown)
1/2 cup nondairy milk (I use soy)
4 tablespoons unsweetened cocoa powder
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups quick cooking oats

What you do: 

1. Line cookie sheet with wax or parchment paper. In a large pot, bring margarine, sugar, milk and cocoa to a boil. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.
2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.
3. Drop teaspoonfuls of the mixture onto prepared cookie sheet and allow to cool. When cool, turn cookies over to dry the bottoms.
4. Store in an airtight plastic container in the refrigerator.
Enjoy!

Mmmmmmmmm, these were yummy. They turned out perfect. I ate two last night with some coffee and sent the rest of them to work with my wife to share with her friends. I had to get the temptation out of the house. They were extremely good and so easy to make. Thanks for the great recipe. :)

:D WOW, mine didn't set up completely, but i couldn't stop eating them right out of the pan, it's really humid here...
I love this, one pot, 2 cookie sheets, 1 spoon, and that's it!
And yes, the PERFECT PMS food!!! :o
I used almond butter cause i hate peanut butter, and it's so incredible. I also used a full 1 Tbsp of vanilla extract, cause you can never have enough, and subbed some of the oats for ground flax seeds. I wanna add some nuts and coconut and freezing them into bars. SO GOOOOOOOOD!!! ;D

I just made these with corn flakes instead of oats, and they're fantastic! I like them even better this way.

I make this with maple syrup instead of sugar and without the soymilk.  Also, throw in some coconut (toasted is best) for even more texture and flavor.  These are awesome.

These are SO good.  It took all I had not to eat the entire batch and to save some for my boyfriend.  I will use this recipe often!!  :)

Mine never became "cookie" like.  ??? They stayed wet and gooey...but my kids ate them all anyway. Did I do something wrong?

I have the very same problem.  Any ideas anyone? ???

could be it's a bit too warm... it's freezing outside here, and it still took about 8 hours for mine to harden, left out on the counter.  you could try putting them in the fridge overnight, i would think that should do the trick.  otherwise, it's possible you didnt let the liquid bubble long enough, that helps it thicken up too.

that being said, i made my batch with chocolate silk (and still added 2 of the 4 T cocoa - im a choco-holic) and home-made cashew butter.  i put a full teaspoon vanilla in.  thank you so much for posting this recipe, i've been looking for these exact cookies for a long time, and was certain there was no good vegan way to make them, figuring the primary binding ingredient was sweetened condensed milk and wasn't sure how to substitute that.  so amazing.  so sweet.  the BEST pms comfort food ever.

Super good. I used this recipe as an inspiration and did the following:  I used a lightly sweetened cocoa powder, so I used way less sugar (I put in maybe 1/4 to 1/2 cup of sugar. I also used applesauce rather than the vegan margarine (I figured the pb provided plenty of fat...  although if you're looking for that buttery taste, you might wanna stick w/ the margarine). And I used almond milk rather than soy. Probably could even do this with almond butter. I also didn't worry about being very precise with any measurements... I just sort of kept adding things until it was the right consistency and taste (so for the person above who said it was too moist, you could probably just add some extra oats next time).  Anyway, thanks for the recipe.  These were great.

These are fantastic!  So easy and delectable... I may've eaten 1/3 of the batch in a day and given myself a huge sugar headache!  ::)

I didn't have any cocoa so I substituted with some hot chocolate mix I had sitting around and decreased the amount of sugar.  Mmmmmm...
