Nobuko's Tofu and Avocado Salad

What you need: 

12 ounces firm regular tofu, 1" cubes
2 large avocados, 1" dice
mixed baby greens
3 tablespoons rice vinegar
1 tablespoon dark brown sugar or equivalent natural sweetener
4 tablespoons sesame oil
6 tablespoons light olive oil
1 tablespoon miso paste
1 finely chopped garlic cloves
2 tablespoons grated fresh ginger
1 tablespoon toasted sesame seeds

What you do: 

Combine vinegar, sweetener, oils, miso, garlic, ginger and sesame seeds in a large bowl. Whisk until emulsified.
Toss in tofu and avocado cubes to coat.
Serve over baby greens.

SO HOW'D IT GO?

I omitted moist of the oils. The result was a very savory flavored tofu, mellowed out by the avocado. Pretty much the only thing I need on top of lettuce.
