Nutty Apple Spice Cake with Icing
2 cups flour
1 cup white sugar
2 tablespoons brown sugar
2 teaspoons baking soda
1 tablespoon cornstarch
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon of ground cloves
1/2 teaspoon of allspice
1 cup of walnuts
1 and 1/2 cups of applesauce
1/2 cup of corn oil
1/2 teaspoon vanilla extract
Icing:
1/3 cup soy milk
1 sick of vegan margarine
4 cups powdered sugar
Mix together dry ingredients. Stir in vanilla extract, corn oil and applesauce. Pour ingredients into a pan. Bake at 325 degrees for 50 minutes.
Icing: soften margarine. Stir the sugar into margarine a little bit of time alternating with soy milk. Stir the margarine, soy milk, sugar mixture until creamy and smooth.
Let the cake cool then apply the margarine.
Enjoy!

delicious cake! i used pecans instead of walnuts and doubled the spices and my cupcakes were great. i frosted them with a cream cheese/buttercream frosting & i think i got close to 21 or 22 cupcakes out of this recipe. the apple flavor is pretty subtle though and i bet these would be great with some diced up apple added to them. id definitely use this recipe again.
This cake turned out really well...a lot like the non-vegan kind my mom used to make.
I put it in a 9x13 pan due to having no fancy springform/bunt pans, and all was well. I also left off the icing. Next time I would DEFINITELY add some raisins.

My husband and I aren't vegans (or even vegetarians) but we made this cake when we had a vegan friend over for dinner the other night. It was fantastic - everyone raved about it and wanted the recipe!!
A couple of notes - I substituted apple butter for the applesauce because I happened to have some on hand, and they're usually a decent substitute for each other in baking (although the apple butter may have added a little more spiciness to the cake than the applesauce would have).
there weren't any specifics about the size or preparation of the pan, so I tried a 9" springform pan which I lined with parchment paper. Perfect! The recipe makes one somewhat thicker-than-average layer when made in this type of pan.
The frosting was wonderful texture-wise, but I thought it could use a little more flavor, so I added about 2 teaspoons of vanilla extract to it. Again, perfect!
This was a really great cake! I'll definitely be making it again!
