Nutty Buddy Protein Balls
What you need:
1 cup peanut butter or soy nut butter (depending on what you have or allergies)
1/2 cup nonfat dry soy milk powder
1/2 cup raisins
1/4 cup maple syrup, agave nectar or molasses (depending on what you have)
1/4 cup dried coconut sugar cookie crumbs, sunflower seeds, granola, mashed cereal or almond bits (depending on your tastes and what you have on hand)
What you do:
In a bowl mix up all the ingredients except the last ingredient (your choice coating). Shape mixture into 1 inch balls. Roll each ball into your coating of choice (last ingredient) and let them chill in the refrigerator until they become solid.

I used crunchy pb, agave nectar, a drop of vanilla extract, and half of a Cherry Jubilee protein powder packet (leftover from an attempt at a cherry soyshake... was a little too gritty for a shake) which I rolled in Back to Nature's Organic Cherry Vanilla Granola for a tasty crunchy cherry treat... and it turned out lovely :) I love a good crunchy snack! thanks for posting this quick & easy recipe.
These are awesome. I substituted chocolate flavored whey protein powder for the soy milk powder, used almond butter instead of peanut and I toasted the coconut first - delicious!!
I love Nutty Buddies! I gave them as a Christmas present, and then had to make more for myself. I like to use crunchy peanut butter and roll them in coconut. Next time I might try currants instead of raisins. They make a really great portable snack for a starving college student!
I only got 20 balls out of my batch (probably due to premature temptation). They were excellent! I rolled some in shredded unsweetened coconut which made them not as sweet. A few that I rolled in chopped walnuts had a sweeter tasted which I preferred.
