Oatmeal Breakfast Bars

What you need: 

2 2/3 cups oats
1/3 cup flax seed meal
1/2 cup dried fruit
2/3 cup chopped nuts (I use pecans)
1/2 tablespoons cinnamon
2 medium bananas, mashed
1 liquid egg replacer (I use Ener G)
1/3 cup canola oil
1-2 tablespoons agave nectar

What you do: 

1. Preheat oven to 350 degrees F. Grease a cookie sheet. Combine all the dry ingredients and mix well.
2. Add mashed bananas, prepared egg replacer, oil and sweetener and mix well until blended and mixture is sticky. Add water, as needed for a sticky consistency.
3. Shape dough into bars on prepared cookie sheet, making the bars about 1/3" thick. I would definitely recommend shaping all the bars at one time, because the longer the dough sits, the stickier it gets.
4. Bake for 15 minutes.
I make these for my husband in lieu of buying him store bought breakfast bars. They are healthier and cheaper.

I made these bars in squares rather than bars, but they are so delicious! I add a lot more fruit then the recipe calls for, such as dried coconut, apricot, craberries, raisins, etc. I also use honey, and add a little bit of mini chocolate chips for sweetness. Best served warm with a cup of tea! Everyone LOVED these! They are really filling too!

I made these again! I love this recipe because it is extremely versatile and super quick to make (about 10 minutes, without baking time).
My wee modifications:
-Dried fruit: blueberries, cranberries, apple slices
-Nuts: Honey roasted peanuts
-Applesauce in place of both the bananas and oil
-Oat bran in place of flax

I also thought about mixing in another type of cereal with it, maybe?? haha

Just in case anyone is interested...

When I made these on the weekend, I froze a few in a ziplock bag to see how they'd turn out.

I just had one now, straight from the freezer and I personally think it was better then fresh.  They are soft enough to bite through, and the cold seems to bring out the fruity flavor more.  I'm going to make a batch or 2 this weekend just for the freezer.  Perfect!!!

These were soooo good!! I made a couple modifications:

• Used 1 cup of apple sauce in place of both the oil and the bananas (worked great in my opinion)
• Used 1 cup dried cranberries for the dried fruit.
• Used leftover walnuts and slivered almonds for the nuts (what I had in the pantry)
• Put in a LOT more cinnamon than the recipe called for. Probably a tablespoon or so. The more the better!
• Put in NO sweetener. It was plenty sweet enough.
• Used oat bran instead of flax (again, what I had in the pantry)
• Used Ener-G egg replacer.

I was making these only for myself, so I cut the recipe in half, but still used eggreplacer equal to 1 egg (I used Kingsmill).  I followed other reviewers advice and used an 8x8 pan, and since I halved the recipe, they were a tad thinner, but still good.  Used agave nectar for the sweetener.  I was expecting something like a store bought granola bar, but these weren't sweet at all.  I don't think I'd  change that though, as they were good the way they were.

This looks really easy and good...I am trying these today! As for oats.....what kind? Quick cooking...steel cut ...old fashiones...... :-[

instead of canola oil, i put coconut oil and i also put coconut shreds! yum. thanks for sharing this! i didn't bake them though, i think i'll just use it as granolas for my yougurt and for breakfast.

These were pretty good. I used sun dried organic cranberries for my fruit and organic cashews for my buts.

Yeah, I totally meant nuts... not buts. lol

These were pretty good. I used sun dried organic cranberries for my fruit and organic cashews for my buts. Replaced the oil with applesauce and used 4 packets sweet n low. I will more than likely use more sweet n low next time, and more cinnamon. All in all, good recipe and I will use it again.  ;)b Thanks!
