Oatmeal Cinnamon Bars
What you need:
2 cups oatmeal
3/4 cup brown sugar
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 cup raisins
1/4 cup chopped pecans or walnuts
2 tablespoons liquid sweetener
1/2 cup margarine, softened
What you do:
1. Preheat oven to 350 degrees F. Mix oatmeal, vegan sugar, baking soda, cinnamon, raisins, pecans and sweetener.
2. Add softened vegan margarine and mix thoroughly to form a nice mushy mass. Place mixture in a 9" square pan and pat down firmly to flatten the surface.
3. Bake for about 20 to 25 minutes. Remove from oven and cool a little. Cut into bars and let cool completely.
You can make these into chocolate cinnamon bars by adding 1/4 cup unsweetened cocoa powder.

These were very yummy! I added a 1/4 cup of sunflower seeds. My kids couldn't wait until they had cooled, so they ate them with a spoon out of bowls. They are very sweet, almost too sweet for me, so next time I may use a little less sugar. They will make a great base for many future granola bar combinations.

OH MY GOD. These were are AMAZING!!!!!!!!!!!!!!!!!!!!!!!!!! I used about 1/2 up of chopped pecans, 1/2 cup of chocolate chips to replace the raisins, probably 1-2 T of cinnamon, an extra T of butter and about 1-2 tsp of agave nectar, baking them for a total of 22 minutes. I'm eating one right now (I haven't them cool all the way yet ;D) and it's taking me back to something- I just can't remember what! :-D I'm definitley gonna make these again!!
Whoops, forgot to add: I also used about 1 scant cup of brown sugar. :)>>>

came out perfect! used walnuts,agave necter,lots of raisens and lots of cinnamon. very crunchy, like a kashi bar, but better!
I tried using 1/4 cup of applesauce to replace half the butter, and then I used 3 Tablespoons of maple syrup.
but alas, they got really crispy hard on the edges and bottom after 20 minutes. Maybe I need to bake them at a slightly lower temp if I go for the low-fat kind???? I don't know. But what wasn't nearly burnt tasted pretty good.
I would also add more cinnamon. Like a lot more. :)
I was looking for a basic recipe that I could add ingredients to and this is it! The bars are awesome. I added pumpkin seeds, shredded coconut, walnuts and I used agave for the sweetener. I added a little more margarine and sweetener to moisten the mix. This one's a keeper!
what kind of oats? can they be the instant kind?
So good! Simple ingredients and simply delish. I didn't have any walnuts though so I used chocolate chips instead. Came out great!
