Orange Ginger Tofu

What you need: 

1 block extra firm tofu
1/2 cup 100% orange juice
1 teaspoon grated ginger
1 teaspoon minced garlic
1 tablespoon maple syrup, or other sub for honey
1 teaspoon balsamic vinegar
1 tablespoon soy sauce
1/4 teaspoon black pepper
pinch of sea salt
dash cayenne pepper (optional)
1/4 teaspoon yellow curry (optional)
1/4 cup chopped green onions (optional)

What you do: 

This recipe is from my mother.
Mix all ingredients but the tofu in a bowl.
Slice tofu to suit your liking, place in a bowl and coat evenly with marinade. Cover well with plastic wrap and refrigerate 1 hour to overnight.
Cook the tasty tofu however you'd like. You could fry it, grill it, bake it, etc.

SO HOW'D IT GO?

I like this. The tofu absorbs the flavors well, at least when it is grilled on a cast iron after marinating. A simple way to dress up tofu; I'd make it again.
