Outstanding Cheezy Potato Bake
oil, as needed
6 small-medium red potatoes, sliced in 1/2" rounds
1/2-1 yellow onion, sliced
vegan buttery spread, to taste (I use Earth Balance)
salt and pepper, to taste
1/2 cup nutritional yeast
1-1 1/2 cups unsweetened nondairy milk or water
1. Preheat the oven to 450 degrees F. Prepare a casserole dish (I used an 8x8" glass pyrex) with oil to cover the bottom. Set aside. Add 1 layer of potatoes to the bottom of the dish (I used 2 potatoes per layer, for 3 layers).
2. Add some sliced onions to the top of the potatoes, season with lots of salt and pepper, and add a few dollops of vegan butter on top of the layer.
3. Add the nutritional yeast to a bowl, and pour in enough milk or water (I used a mixture) to make a sauce (medium thinness). Season this with salt and pepper. Pour some of the sauce over the first layer, but remember you need enough for 3 layers.
4. Continue to layer the dish with potato, onion, salt, pepper, vegan butter, and cheezy sauce. You should have enough sauce to pour some on top. I recommend lots of onions on top because they brown so beautifully. Make sure you season with enough salt and pepper!
5. Pour some milk in the dish to about 1/2 up the dish. Bake for 45 minutes-1 hour (until the potatoes are very tender, and the sauce is bubbling).
Honestly, we could not tell any difference between this and the au gratin potatoes of our past.

yummmmmmy! The first time I did this, I think I used rthe wrong type of yeast because all I could taste was the yeast. I tried it again, and I love it!! :) I WANT TO EAT MOREE! I also had only about 1/4 cup yeast left, but kept the other ingredients as is. Still was delicious! Can't wait to buy more yeast to make this again!

I've been craving potatoes, so I bought 2 bags....I'm gonna be having a carb overload this weekend....
So I made these last night and they were good....probably would have been great had I remembered to use salt....who the hell forgets salt on potatoes??!?! Well, thats my issue, but they were very good...
I added a bunch of spices to my nooch sauce...obviously not salt though....
I'll try again....next time with garlic and more onion....oh yeah, and salt.

this was DELICIOUS. i added some vegan shredded mozzarella style cheese on top and just broiled for about 2 minutes.. BOMB.
I made this last night! I took a few bites (it's for dinner tonight...we're having it with veganomicon's chickpea cutlets) and it was so delicious! Can't wait to actually have some tonight!!!!

Oh wow... I just took a bite, and this stuff is heavenly. So, so good-- great comfort food! And so easy to make! Yep, this is going on the "favorites" list, although I may use less oil in the bottom of the pan next time. Maybe I'll use non-stick spray.
I made a half-batch (I don't even own an 8x8 dish, so I put it in a 4x4 round dish) and I just put it in the oven. I used seasoned salt to give it a bit more flavor, and plenty of pepper. I added a bit of flour (1/4 cup) to the nutritional yeast sauce, and used plain soymilk in the sauce as well. I can't wait until it's done so I can eat it for breakfast!
