Pasta Salad
What you need:
12 oz whole wheat rotini
1 1/2 heads broccoli, chopped
3/4 pint grape tomatoes
15 oz can black beans
3 oz vegan soy blue, asiago, or feta cheese crumbles
1/2 cup balsamic vinaigrette
What you do:
1. Cook, drain, and cool pasta.
2. Steam broccoli until slightly soft, about 7-10 minutes, cool.
3. Combine all ingredients in a large serving bowl, ad chill at least one hour.

Does anyone know where to purchase vegan asiago "cheese"? I live in the Atlanta, GA area.
I've never seen vegan asiago period. Sunergia makes a vegan feta that's pretty good - available at independent HFS and sometimes Whole Foods. Sheese makes a vegan blue that has a great taste (the other flavors aren't all that good, though) that should be available in any larger city.
