Peach Cobbler
1/2 cup sugar
1 tablespoon cornstarch
1/4 teaspoon cinnamon
4 cups peaches, sliced (about 6 medium)
1 teaspoon lemon juice
3 tablespoons shortening
1 cup flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup nondairy milk (I use soy)
1. Preheat oven to 400 degrees F. Mix 1/2 cup vegan sugar, cornstarch and cinnamon in a 2-quart saucepan. Stir in the peaches and lemon juice.
2. Cook, stirring constantly, until the mixture thickens and boils. Boil and stir for 1 minute. Pour into an ungreased 2-quart casserole; keep hot in the oven.
3. Cut shortening into flour, 1 tablespoon, vegan sugar, the baking powder, and salt until mixture resembles fine crumbs. Stir in milk.
4. Drop dough by 6 spoonfuls onto hot peach mixture. Bake until topping is golden brown, about 25-30 minutes.
For blueberry, omit cinnamon. Substitute 4 cups blueberries for peaches. For cherry, substitute 4 cups pitted red tart cherries for peaches and increase vegan sugar in cherry mixture to 1 1/4 cups, cornstarch to 3 tablespoons, substitute 1/4 teaspoon almond extract for lemon juice. For plum, substitute 4 cups sliced plums (about 14 large) for the peaches, increase vegan sugar in plum mixture to 3/4 cup, cornstarch to 3 tablespoons, and cinnamon to 1/2 teaspoon.'

This was just okay for me. The dough was too dry for my taste. I'm used to a more moist chewy texture for cobbler. I guess because it's vegan and you have to give up some tastes when you decide to go vegan. I'm fine with that but I'll keep looking for another recipe.
We had this made with fresh peaches for supper tonight. I doubled the peach filling ingredients except for the sugar. I substituted agave and the amount for one recipe was plenty for a double amount of peaches. I used quick tapioca in place of the corn starch and a gluten free flour mix for the flour. I don't use shortening, so I used oil and it turned out too good. I could hardly keep from eating it all myself. Wonderful stuff!
I used tapioca flour for arrowroot. Avocado oil for shortening. 3/4 cup ww flour & 1/4 c rice flour for the flour. I followed advice and added 9 peaches. And used 1/2 cup vegan cream cheese ( out of milk). And it turned out pretty good with vanilla rice cream. The sugar I replaced with Stevia and honey. And added couple blueberries lying round.
i have a peach tree and just picked a ton so i made this with 8 cups of FRESH peaches, doubling the fruit mixture. and oh myyyyyyyyyyyyy this is the best thing ever. i am using so much self control to not eat the whole pan. i way lessened the sugar and added a swirl of agave and used lotss more cinnamon :)>>> i also added about a cup of oats and 2 tbs olive oil instead of shortening. sprinkled the top with cinnamon and sugar. ahhh loooooooooove
Yum. ...buuuut....I was a little confused when the directions said to add the spices the stir in the fruit. And there was NOT enough liquid for the cornstarch to disolve. I had to make a little cup of corn starch and water, then add it to the pan. The fresh peaches I bought turned out to be gross, so I used frozen peaches (my morning soy smoothie peaches) and I had to add frozen strawberries too because I had nowhere near 4 cups of peaches. I like the dough that went atop the filling. I took the advice of other reviewers and added grahm crackers and brown sugar on top. Oh, I also added some nutmeg to the peaches. The whole ordeal took way longer than I wanted to spend on a dessert. I will only make this for holidays or special occasions...bah humbug! ^-^
This was absolutely incredible! It was a huge hit at the get-together I made it for. I made extra filling this time, but I think I might try it exactly as written next time--the topping was fantastic.
I made this with apples instead of peaches. (It's what I had on hand.) I used apple pie spice rather than cinnamon and it turned out great! The whole family loved it. I agree that it needs double filling though. Had more biscuit than fruit.

This topping was very biscuit-like, which is good since cobbler are supposed to have a thick biscuit topping. The filling was excellent. I ate it warm with vanilla soymilk on top.
