Peanut butter Chocolate Chip Cookies
1 1/2 teaspoons Ener-G Egg replacer (or equivalent of 1 egg from another brand)
2 tablespoons warm water (to dissolve egg replacer)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/2 cup vegan shortening
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup vegan chocolate chips
1. Preheat oven to 350 degrees F. Mix egg replacer with warm water, then mix sugars, peanut butter, vegan shortening, and egg replacer until smooth.
2. Add dry ingredients and mix until blended evenly. Add chocolate chips.
3. Make each cookie about 1" in diameter and flatten with a fork. Place cookies 3" apart on an ungreased cookie sheet.
4. Bake for 9-10 minutes. Let cookies sit on tray for at least 5 minutes.

I'm not generally a great fan of Peanuts, but a friend requested PB Cookies, so I made her these. They were awesome!
I used chunky PB, which worked really well. I didn't have brown sugar, so I used more white sugar plus a tbsp of Molasses instead, and I added a little more PB but left out the Chocolate Chips. These were flying off the cookie sheet and even I've had a fair share! Very good, easy recipe.

i live at altitude (8150ft) so added a little more flour (max of a 1/4c) a little more egg replacer. took about 12mins or so as well.
Greeeat! These came out crispy, which was super nice. I made both, and I prefer them without chocolate chips.
The peanut butter comes through a lot better that way.

These where great cookies!
These are really great peanut butter cookies. Few vegan peanut butter cookie recipes are good let alone great. This is fabulous and is replacing my previous vegan peanut butter cookie recipe. Chocolate chips are optional in my opinion. They are great both ways!
Great Cookies!! These are the first vegan cookies i have made that came out like, well, cookies. But then, i don't really bake. Lol.
I followed the recipe almost exactly, but i had no shortening, so i went with margarine.
Excellent! My husband ate alot (and he politely and quietly never really eats my cookies)
